Fresh Rhubarb Pie

Excellent! I would add more rhubarb next time (probably adjust the sugar as well). It cooks down and we like thick pies. But this may be our Memorial tradition in our house.

Beet Salad with Goat Cheese

A very good salad for those of us who don't care for beets. I always thought beets tasted like dirt, but the candied walnuts and sweet dressing mask the beet flavor. I thought this was very good, even with crumbled feta, which was all I had. But I believe the smooth goat cheese is an even better choice. Thanks for sharing.

Mouth-Watering Stuffed Mushrooms

These were good. I ran the mushroom stems through the mini-chopper first, then combined the whole filling using the mini-chop. Easy to prepare and baked up well.

Fruit Pizza

VERY sweet. But it was super easy. I prefer less sugar in the foods I give to my kids, so I may try the refrigerated croissant dough as a crust instead of the sugar cookie.

Quinoa Pudding

We liked it. I followed the suggestions to use almond milk and the results were good- it had a presentation almost like rice pudding. I left out the lemon juice, like others suggested. I'd make it again.

Asian Lettuce Wraps

We really liked this. I made it vegan by cooking 1 cup of lentils in place of the beef. Then I saved the green onions and water chestnuts for a topping and added bean sprouts and shredded cabbage for topping options as well. Drizzle a little chili sauce and it makes an excellent meal. Keeps well as a leftover. Thanks for sharing.

Sausage, Peppers, Onions, and Potato Bake

We liked this recipe, because it was change from what we normally eat for dinner. But I think its lacking something. Its not very "saucy"- there's nothing holding the ingredients together (like in a pot pie). I didn't like that I had to pan fry everything in advance. I'm a busy mom, and don't want to stand at the stovetop for an hour putting a meal together. I might make it again, but probably pretty infrequently.

Lentil Chili II

We liked this recipe. I followed the recipe's spice amounts and I thought, although it was mild, still had great flavor. and it wasn't too spicy for my toddlers to eat. Eliminate the butter and you have a very good, easy vegan meal. Makes tons. My 6.5 Qt Le Creuset was barely big enough to contain it all. Oh, we did add a can of kidney beans (we like beans). Will make it again

Roasted Winter Root Vegetables

I rarely give out 5 stars for anything, but this one earned them! My mother made this recipe last year and loved it. She suggested I try it. I only tried a rutabaga once before and wasn't a huge fan, but in this recipe you'd never know it wasn't a potato. Parboiling in advance makes this recipe super simple. Its easy to divide too, I made this for just my husband and I, so we didn't need 15 lbs of veggies. I used just 8 oz of each vegetable and estimated the rest of the ingredients. It turned out perfect. I will be making this again and again. Thanks for sharing!

Asparagus Cashew Rice Pilaf

easy to prepare and delicious. I toasted the cashews and steamed the asparagus in advance. I used only 1 full can of vegetable broth and substitued white wine for the remainder.
