I enjoy cooking pork and poultry, particularly outside in oil or on the grill.
My favorite family cooking traditions
Christmas turkey, heavily injected and deep fried.
My cooking triumphs
Cooked a whole hog on an outdoor grill (with the help of my father-in-law "the expert." This led me to try to grill a whole deer. This was successful albeit an ugly looking outcome (see photo)!
My cooking tragedies
I had just started cooking when I was making mac and cheese. realized after starting that I did not have milk. I substituted coffee creamer for the milk, unfortunately it was flavored creamer. Kids did not trust my cooking for months and I still hear about it.

Black Bean and Salsa Soup
I used dry beans as that is what I had, so it took a few hours to make. It turned out fantastic. I added some jalepeno pepers and onions to it after blending and after the initial serving, I reduced it down to make a wonderful dip for chips.

Captain Crunch Chicken
This was a fun and easy recipe to do with the kids. Instead of placing the chicken breasts on a greased baking dish, I laid them on a bed of uncrushed cereal and poured honey over the top of it. very moist and nice flavor.

Balsamic Roasted Pork Loin
Had a very good taste to it. My wife felt the vinegar taste was a bit much. Easily fixed by adding pineapple chunks as a topping. I will be making it again, possibly adding some pineapple to the marinade. The kids enjoyed it as well.
