About this Cook
Who am I? I'm many things! I'm first and foremost a Dad, a husband, a musician, an IT professional (Gotta pay the bills), Jeeper, Extreme 4x4er, RV camper (Easier to RV then tent with young kids)and somewhere in this jangled mix of things I am and do, I'm a cook. Have loved cooking since I was a kid (even though the dogs wouldn't eat my pancakes!)and look forward to passing the joys of cooking on to my sons.
My favorite things to cook
Mexican Food! nuff said! I love to cook other things as well but have a strong love affair with the Mexican Food. Grew up next to a Hispanic family and was eating chips and salsa (Rocket Fuel) at the age of 2. If it's not Mexican, I like doing Irish and English dishes as well as desserts.
My favorite family cooking traditions
Really don't have any cooking traditions other then Peanut Butter Cookies at Christmas, but one thing I am doing is building a new tradition within my immediate family. This would be getting the kids involved at an early age. So far so good. Got my oldest son (8) to create a unique dessert the other night and it was quite good!
My cooking triumphs
Learning the joys of cooking on a professional grade stove. Became the proud new owner of a used gas Viking range and now know what all the fuss is about. Talk about flame control! Love it and love the $800 price tag I got it for! As far as dishes go, my famous Shredded Beef Tacos have yet to be topped. They are so good I even got a Vegetarian to eat them. My cooking tragedies
Beer Cheese soup. It was bad...OK REAL bad.....even the dog turned his nose up at it. I will make it work and taste good one day, but today is not that day. Nor tomorrow........ To be honest with you, that soup scared the hell out of me, the family and the dog.

Creme Brulee
Simple, tasty and always a hit with the guests. Used ChefPeons adjustments and worked great. If you are using Ramekins, yield is going to be 4 servings.

Apple Crisp II
All I've got to say is Figgen YUM!!! Just cooked this one as a desert to my soon to be famous Shepards Pie and it was every bit worth the effort. Highly recommend it!

Spider Cupcakes
Ok, we had fun with this one for my sons Halloween party and they were a big hit! As another member said, we were unable to find the licorice so improvised with non-edible black pipe cleaners. Very creative and fun project!
