Banana Cake VI

This cake is delicious! The unconventional instructions do indeed produce a nice, moist cake. I would note that in my oven it took 1.5 hours to bake, however. Next time, I think I will add a little more banana to the cake and a little less vanilla to the frosting. But overall, a wonderful recipe.

Vegetable Cheese Strudel

The first time I made this, I found it to be a little bland. Since then, I have added a generous helping of Italian seasoning and some crushed red pepper when cooking the vegetables, and sometimes I also include some hot Italian sausage. In addition, I now serve it with marinara sauce to which I have added a little cream and crushed red pepper for a kick. It was a big hit at Thanksgiving.

Favorite Old Fashioned Gingerbread

My mother-in-law and I just made this, and it came out absolutely delicious! We doubled the ginger and used 1.5 times the other spices, and we are going to top it with a cream cheese frosting. Perfect for the holidays!

The Best Thai Peanut Sauce

I used this recipe to make a tofu stir-fry and a chicken stir-fry, but we did not enjoy it at all. The sauce is extremely thick and has a strong peanut butter flavor to it.

Zucchini Quiche

This quiche recipe is quite tasty. I would recommend layering the entire top with sliced zucchini. I only created a ring around the outer edge. As a result, the center rose higher than the edge, and I didn't really like the way it looked. Otherwise, I will definitely make this again.

Fried Rice Restaurant Style

This is a very quick and easy fried rice recipe, and I thought it tasted good. I used brown rice that I had refrigerated the day before and frozen peas and carrots for the vegetables. I will definitely make this again.

Graham Cracker Crust I

This is a good, easy crust. I use it for cheesecakes, and it's always a hit. I've taken to using a full stick of butter, which seems to hold together a bit better.

Roasted Red Pepper Cream Sauce

This sauce was absolutely delicious and very easy to make! I roasted the peppers in advance and refrigerated them, so I was able to make a quick but impressive weekday dinner. I followed the recipe exactly and will do the same in the future.

Best of Everything Veggie Burgers

These veggie burgers are delicious! Having been a vegetarian for many years, I am fairly picky about my burgers. I would definitely recommend these, and my non-vegetarian husband liked them as well. I added some soup powder to season the rice while it cooked; substituted shallots for the onions; used a full cup of whole wheat bread crumbs; and cooked the burgers with a little canola oil on a skillet.

Vegetarian Shepherd's Pie II

This is a very good, filling vegetarian meal. I used baby red potatoes mashed with a little bit of butter, milk, garlic, and salt for the top. I also had to use considerably more vegetable broth for the lentils and barley. I will definitely make this again. For recipe users new to cooking with lentils, note that unless you soak them prior to cooking, they take 45 minutes to 1 hour to to cook.

Beef Teriyaki

This recipe turned out very well with a few changes, and my husband really enjoyed it. I served it along with brown rice prepared according to the recipe for Fried Rice Restaurant Style. I made the following changes: 1) Marinated beef in 1/4c teriyaki sauce, 1tsp minced ginger, and 1tsp minced garlic for about two hours, 2) Added 1/4c diced red onion and a bit of oil when browning the beef, 3) To the sauce, added 1/4c teriyaki sauce, an extra 1/4tsp garlic powder, and 1/2tsp crushed red pepper. I will make this again.

Mexican Fiesta Pasta Salad

This is a very good recipe - looks lovely and tastes good. I am giving 4 stars because I didn't follow the recipe exactly. I had only a 12oz box of pasta and was concerned about the soupy consistency noted by others since I did not have time to chill overnight to set. So I cut the mayo (light), sour cream (light), and salsa (hot) in half but left the spices the same. I also omitted the olives and added fresh cilantro and 1/4 tsp cayenne pepper. Will definitely make again.

Spicy Garlic Lime Chicken

My husband really liked this recipe. We sliced the chicken and used it in fajitas. We also followed other reviewers in adding a little bit of chicken broth and fresh cilantro at the end. Next time I will try a splashs of tequila as well.
