Eggplant Parmesan II

This was very tasty but the recipe needed some adjustments: the eggplant should be baked for at least 10 minutes on each side at 400 degrees. I put some canola oil on the baking sheets and heated them up beforehand. With 2 eggplants, I needed 3 eggs, and I used 1-1/2 jars pasta sauce. My children were unaware that I had changed the recipe from the fried version and ate it with gusto.

Baked Honey Mustard Chicken

You have to like mustard, since my husband found it a little too "pungent." I'll try it with dijon mustard, instead of brown deli mustard, next time.

Potato Leek Soup I

Very tasy but instructions are impractical as 5 lbs. of cooked potatoes won't fit into most food processors (I have a standard Cuisinart). I had to process mine in batches, which added much time to the preparation.

Honey Cake I

Very light and yummy, different than those heavy honey cakes. On a practical note, if you have only one mixer like I do (I have a KitchenAid), beat the egg whites first, set them aside, then mix up the batter. You'll have the egg whites to add as the recipe instructs.

Baked Stuffed Pumpkin

In order to use this as a side dish, I omitted the canned cranberry sauce, pineapple chunks and brown sugar, and instead used only 2 apples, added a chopped onion, craisins and 1/3 c. maple syrup. For additional spicing, I put in ground cloves. Yummy!

Crab Salad

I found that 2 lbs. of crabmeat was too much for just 4 people, and so I cut the recipe in half served it on a bed of lettuce for 8 as an appetizer. I also added the juice of 1/2 a lemon, which was probably about 1-1/2 tbs. It was very yummy and got rave reviews from my guests.
