Three Bean Salad

Quite oily, sour, and overpoweringly celery-tasting. I used dried beans instead of canned, so maybe the extra salt of canned beans would change the flavor... but I would not count on it.

Mrs. Sigg's Fresh Pumpkin Pie

Great starting place for fresh pumpkin pies. I prepped the pumpkins by slicing them in thirds and baking for about an hour. After a quick blitz in the blender (after they cooled, of course), they were ready to add to the recipe. I used half and half the first time I made this and heavy cream the second time... both were super delicious. I do not purchase pie spice, so I added cinnamon, nutmeg, ginger, and cloves to taste. Thanks for the great base recipe!

Spanakopita (Greek Spinach Pie)

I used this recipe as a starting point for folded spanakopita triangles. I increased the garlic to four cloves total and added 3/4 cup total of fresh herbs (dill and parsley). The greens mixture was a sloppy, eggy mess. There was far too much liquid in the fresh spinach. The next time I make these, I will be sure to cook the spinach separately and drain it. The mixture also needed a definite hit of pepper and salt. It was too bland for my tastes. I will use this recipe again, but only as a starting point.

Cornmeal Molasses Bread

Never fully rose... followed directions and ingredients exactly (and my yeast is active). That said, it was fairly light and airy. I was not a big fan of the flavor (could not taste the molasses), but my dining companion liked it.

Pumpkin Soup

Great base recipe. Made the following changes - roasted my own pumpkins - used 4.5 c vegetable stock instead of 6 c chicken stock - used 3 cloves garlic - stuck the onion and garlic in the blender before cooking; much easier to work with than blending the whole soup after cooking! - used only .25 c heavy whipping cream - added a dash of cumin and a heavy helping of curry powder - skipped the whole peppercorns

Lavash Cracker Bread

These were great! A bit tough to roll out, but that may have been due to my kitchen's temperature (it was rather warm when I made these). They tasted great fresh and worked well for the next two days in our lunch boxes. My advise: make sure you have a large amount of counter space for rolling out and make sure your counter is cool (not warm). Edited to add: I tried these again for Thanksgiving with only all-purpose flour... they never rose! I do not think the flour would have made that much of a difference. No clue as to what I did differently, but I will try these again.

Quinoa and Black Beans

This was just okay (if you overlook the fact that it turned out as a gloppy consistency)... I eat quinoa regularly and I found that this did not have much oomph to it. The spice was lacking, even with my addition of a Mexibell pepper. I substituted pinto beans for black beans, but even that difference could not account for the general lack of excitement in the dish.
