Three Bean Salad
Quite oily, sour, and overpoweringly celery-tasting. I used dried beans instead of canned, so maybe the extra salt of canned beans would change the flavor... but I would not count on it.

Mrs. Sigg's Fresh Pumpkin Pie
Great starting place for fresh pumpkin pies. I prepped the pumpkins by slicing them in thirds and baking for about an hour. After a quick blitz in the blender (after they cooled, of course), they were ready to add to the recipe. I used half and half the first time I made this and heavy cream the second time... both were super delicious. I do not purchase pie spice, so I added cinnamon, nutmeg, ginger, and cloves to taste. Thanks for the great base recipe!

Spanakopita (Greek Spinach Pie)
I used this recipe as a starting point for folded spanakopita triangles. I increased the garlic to four cloves total and added 3/4 cup total of fresh herbs (dill and parsley). The greens mixture was a sloppy, eggy mess. There was far too much liquid in the fresh spinach. The next time I make these, I will be sure to cook the spinach separately and drain it. The mixture also needed a definite hit of pepper and salt. It was too bland for my tastes. I will use this recipe again, but only as a starting point.
