Pink Cloud
I love cottage cheese and needed an excuse to use up a tub of it so I made this recipe and loved it! Used sugar free strawberry jello, 1% cottage cheese, fat free whipped, and a can of no sugar added canned fruit to keep the calories low. I ate the whole thing in 3 days! In hindsight I probably would put the cottage cheese in a blender to get all of the chunks out for those who don't like it. Will make again!

Cottage Cheese Roast
Yes this does sound like a weird combo but it actually works. I left out the oil , used egg whites, and used 2% cottage cheese to make it low fat. I used regular corn flakes and no nuts. I put everything in a food processor until it was a little less chunky and put it in a casserole dish. My boyfriend thought it smelled good when cooking and I ate it the next day for dinner. Not bad, but I would only use HALF of the onion soup mix and taste it before using the whole packet. I found mine to be a bit too salty. I think it would be cool to puree some carrots in this or use spinach or even mix in brocoli to the mixture. Tasty and vegan!

Banana Crumb Muffins
These muffins made me look like the best baker in the world! My boyfriend gobbled these up in 3 days and I HATE banana flavored food and I even loved these! I followed the recipe except that I used 1/4 cup of brown sugar and 1/2 of white because I love brown sugar. 3 medium bananas come out to be 1 1/2 cups of banana FYI. I also threw in a tsp of cinnamon and tsp of vanilla. I followed one of the reviews and let my muffins bake a bit before putting on the topping but that was a mistake because the muffin tops were already rounded and the topping just fell off. I ended up putting the muffin tray on a cookie tray to catch the topping that fell and baked the rest of the way after I added the topping. Turned out perfect but next time I'm just going to add the topping before baking. Less cleanup! ALSO, here are some more tips: Don't add the egg directly to your hot melted butter unless you want your egg to be cooked. Gross! When you mix your dry and wet ingredients, they are right about not over mixing. I think that is the main trick. I had a few spots of flour here and there after stirring a few times and then I immediately added it into my muffin cups. AMAZING recipe!
