Chocolate Peanut Butter Cups

Reviewed: Jan. 3, 2011
I have made these three times and it gets easier every time. Everyone who has tasted has loooooved them and wants the recipe. I do find it easier to use sturdier cups than making your own paper or foil liners. I went to Michael's, the craft store, and they have "confectioner's cups" to place truffles or various candies in but they are a thick, sturdy waxed paper and are the PERFECT shape for the cups and hold their shape well under the weight of the chocolate. No one could believe that I made the peanut butter cups by hand!

Texas Caviar I

Reviewed: Jan. 3, 2011
Wonderful as a salsa or bean medley side dish. I served it with tortilla chips but it was so tasty it stands on its own two feet. My guests loved this recipe and I will definitely make again. Thank you for the contribution!

Elegant Fig Appetizers with Goat Cheese and Almonds

Reviewed: Jan. 3, 2011
These were just ok for me and my party-goers. You must really love fig to be a fan of these. I liked the concept but found the fig texture to be somewhat off-putting as did my guests. The warm fig as a cracker was just sort of odd and unappealing. I would make these again but I would make a fig spread instead and layer the remaining ingredients atop crostinis. I also used a balsamic vinegar glaze instead of straight balsamic vinegar which people liked.

King Crab Appetizers

Reviewed: Jan. 3, 2011
I made these for a New Years party. I used expensive lump crab but agree it was not necessary as the mixture is quite creamy and cheesy. I used the pre-made phyllo dough cups as well which was extremely easy and turned out well. I had one or two people who really liked them but these weren't a total stunner. Granted it takes a lot to truly wow me. I used the leftover crab mixture as a dip for crackers which people enjoyed as well. Overall, these were good but they didn't have that wow-factor I was looking for.

Double Tomato Bruschetta

Reviewed: Jan. 3, 2011
These were good but there wasn't anything really special about them. It just tasted like typical bruschetta to me, but if that's what you're looking for this recipe will work. I did find that the mixture was a pretty liquidy so after broiling you must eat immediately or the bread gets soggy. Would be better for an entrée appetizer than hors d'oeuvres that are left to sit. I would make again but half the recipe and eat immediately.

Bacon Wrapped Smokies

Reviewed: Jan. 3, 2011
These were extremely easy to make and turned out fine. I did use a broiling pan so the grease could drain and just sprinkled the sugar on top instead of coating to cut down on the sweetness. They were still sweet, so I'm glad I cut back. Overall, these were good but not great. There really wasn't anything that interesting about them. They just tasted like Lil' Smokies in brown sugar flavored bacon to me although I made two batches and they were both gone at the end of the night at the party but I assume because they were just easy to pop in your mouth.

Homemade Butter

Reviewed: Dec. 15, 2010
I used a hand mixer instead of a food processor or blender and I thought I was doing something wrong as it took quite a while (around 25-30 minutes of mixing) until the butter began to separate. I then squeezed the buttermilk out using both my hands and then a spatula, added the salt and mixed, and then rinsed with water. Overall, very easy and tastes great.

Best Toffee Ever - Super Easy

Reviewed: Dec. 15, 2010
Rave reviews! This toffee is very easy to make and tastes very expensive. My only suggestion would be is that slow and steady wins the race when making the toffee portion. I heated on medium for about twenty minutes, stirring the entire time, and then slowly raised the heat until it turned amber (an additional ten minutes). My boyfriend took this to work and everybody loved it and I couldn't keep my hands off of it!

Peanut Butter Cup Cookies

Reviewed: Dec. 9, 2010
I love this recipe! It is exceptionally easy and I always get rave reviews. My only suggestion would be to follow the bake time to a tee. The cookies may look undercooked at 8 minutes and so the normal reaction would be to bake longer. Trust me, it is not necessary and the peanut butter cups will not insert as easily and the cookie will be drier. After they cool, they brown a bit more and are the perfect consistency.
