Chicken Tikka Masala

This was very good! I used Greek yogurt, and made two versions. One vegetarian with Tofu and one with Chicken. Also, we added mushrooms to the skewers. In place of heavy cream I used skim milk and little bit of fat free cream cheese to thicken up the sauce.

Sugar Coated Pecans

Wow, these were excellent. The recipe was very simple and they were a huge hit at Thanksgiving! I mixed pecans and walnuts (They were on sale) and I actually ended up liking the walnuts better.

Ghirardelli® Triple Chocolate Truffle Cake

This was very good, rich and fairly simple to make. There is too much of the Ganache though. You could cut the portions in half and it would be perfect.

Mahi Mahi with Coconut Rice and Mango Salsa

This recipe was excellent. I made it two ways (One with Mahi and one with Extra Firm Tofu), the tofu was excellent vegetarian alternative. Just make sure you press it and broil it for an addition 10-15 minutes. Otherwise prepare exactly the same. I substituted long grain brown rice and light coconut milk to lighten it up a bit, it was very good, but I imagine it would be better with the regular coconut milk. I cut back on the red peppers a bit and it was still pretty spicy, so be careful with this… you can always ad more; the coconut rice and mango do help to balance out the heat. Also I took the advice of one of the other reviewers and made a salsa to go along with it, a combination of avocado, cilantro, lime and salt…. YUM! I made a batch of the marinade and used it to sauté veggies for the side (Red bell peppers, mushroom, broccoli and red onion). It was very good and complimented the dish nicely. This recipe is a keeper! I think I will also try it with tilapia next time as recommended by another reviewer.

Baked Kale Chips

These were excellent! They took a little longer to cook than indicated, but worth the wait. Instead of seasoned salt I used fresh ground salt and dusted with a little bit of ground mustard, and a pinch of crushed red pepper. We served them with burgers, so it was a perfect low carb side dish.

Artichoke Stuffed Mushrooms

This is a good recipe, but it made about twice as much filling as I needed. I was able to make another 12 mushrooms and put the rest in a baking dish to make a dip. It actually turned out better as a dip with some tortilla chips. The mushrooms came out a little soggy, so I would recommend not greasing the pan first and adding about 10 minutes to the cooking time. Although they were good, I felt like they needed something. All the flavors were very rich, adding a spice would help break that up. If I make this again, I would add some smoked paprika.

Cajun Potato Soup

I made this soup vegetarian, and it turned out great. I love the idea of adding the spinach. I felt it needed some seasoning since I left out the sausage. I added Tony's Creole seasoning and a good amount of smoked paprika. I also threw in some sharp cheddar cheese. It was excellent!

Chipotle Chicken

This was a great recipe! I made the following modifications based on previous reviews: - Reduced portion of Chipotle peppers in marinade by half. (It had some spice, but was not overwhelming). - Grilled the chicken instead of broiling. - Cooked sauce in skillet with corn and peas - Added about 1.5 Tbls of adobe sauce into the sauce - Used Low Fat sour cream and added about 1/3cup of 2% cheddar cheese and 1tbls of flour to the sauce for a thicker consistency. - Served over rice I really enjoyed the sauce for this, it had a Smokey flavor similar to bacon but without the fat! I think it would be great on top of enchiladas!

Orzo with Parmesan and Basil

This is a really great recipe. I’ve made it at least 3 times now. We don’t cook with butter, so I substituted olive oil and reduced to one tablespoon. I used vegetable stock instead of chicken since I’m a vegetarian. This is a great side dish with Marsala!

Japanese Fusion Guacamole

This was an interesting twist on guacamole. I was serving a thai themed meal so I decided to try it. I couldn't find Sisho leaves anywhere so I had to leave them out and substitute some thai basil. I recommend cutting the wasabi in half to start. The flavor was a bit overwhelming, you can always add more if you need it.

White Bean Chicken Chili

This is a pretty solid recipe, but did require a little tweaking. I made two versions, one vegetarian with a soy chicken substitute and one regular. The regular version was made a tall skillet pan and actually required additional liquid to be added, so we added a cup of beer and a little milk. The other veggie version cooked in a Dutch oven required cornstarch to thicken it up. I added one poblano pepper and one jalapeño pepper to each batch. I roasted 5 tomatillos along with the peppers in the oven, then added them into the chili, and only did half the amount of Verde salsa (as substituted by other reviewers). In addition, in the veggie version I added about ½ tsp of chipotle pepper seasoning. In order to get the right consistency and absorb the flavors this needed to be cooked down for at least 3 hours.

Stuffed Cabbage Rolls

The cabbage rolls were not bad, just a little bland for our taste. I think it would be a good recipe for kids, but not for two adults. Also, they were very mushy left over, and virtually inedible.

Jalapeno Popper Cups

The filling was very good, but they do not set well for a party, because they must be eaten hot. If you plan on eating these within 10 minutes of pulling them out of the oven, then you’ll enjoy them. I doubled the recipe, so I had left over filling. I baked the left over filling and served with chips the next day. This was much better! Also, I substituted some smoked Gouda cheese for the bacon bits since I am a vegetarian. This gave I a very nice Smokey flavor without the meat.
