Ginger Salmon

My wife cooked this recipe last night for dinner. She said it was very easy to make and relatively inexpensive. I enjoyed this Ginger Salmon as a tasty alternative to grilled Salmon. This recipe gave the Salmon a sweet, tangy flavor. I also like the idea of incorporating Ginger into the recipe, since I heard Ginger helps in digestion. I have seen those gnarled Ginger roots in the grocery store for years, wondering what people ever did with them. This recipe makes excellent use of Ginger.

Squash Pie

Wow! This is a serious threat to the great pumpkin pie. Butternut squash is an incredible alternative to pumpkin. I think both are equal in taste, but it's always good to have a wide variety of foods in your diet, so this is a tasty way to get yet another vegetable into your digestive tract. It has to be good for you, but it tastes "naughty". Yum! I learned an important lesson after making this... so maybe you can keep this in mind when trying this recipe: The quantity of filling this recipe produced was way more than I could possibly fit into one 9-inch pastry crust. In fact, I had so much left over, I filled a second crust and still had a little extra that I poured down the kitchen sink. Now I have two pies in the refrigerator, one full pie and another one partially eaten. Next time I make this, if I only want one pie, then I will cut the ingredients in half. Maybe my pie crusts were more shallow and not as deep as Carol's. I used the Pillsbury 9-inch pie crusts. If you want to make only one pie but you have much more filling left over like I had, be prepared to have 2 pie crusts. If you do not have an extra pie crust, you could freeze the extra in a freezer bag to be used the next time you want to make one pie. It will be easier to make this pie next time if you already have the filling on reserve in the freezer.

Lemon Pepper Pasta

Super-Good Oatmeal

I tried this recipe for the first time yesterday and liked it so much I had it again for breakfast this morning. This breakfast is suprisingly filling. A big plus to this recipe is that it is quick to make and it's easy to clean up afterward. It's healthy too.

Stuffed Green Peppers I

It's cool to eat a meal in a pepper and it's surprising how filling those little rascals are. I like dem stuffed bell peppers, mmm...hhmm! My main concern while preparing this meal was to watch over the rice carefully. While cooking the rice mixture, the water kept evaporating. If you don't keep adding water, the rice may burn to the pan. Also, you may want to cook the rice a bit longer than 15 minutes to get the rice more tender. My wife was impressed with my cooking abilities. This recipe made me look like a champ!

Soy Sauce Chicken and Rice

My wife and I made a dinner together using this recipe. We both enjoyed the dinner and we will make it again. We made 3 modifications: 1. Decreased soy sauce in half to 1 tablespoon, because my wife says soy sauce makes her retain water. We thought this meal had enough flavor with only half the soy sauce. 2. Increased the rice to 3/4 cups, based on GTIDEY's tip. It worked out just right for us like this. 3. Decreased bake time to just 1 hour. Since the chicken has already been browned in the skillet, I believe it would have been overcooked in the oven if baked for 1 1/2 hours. The meal was well-cooked with just 1 hour bake time.

Okra, Chicken and Rice Casserole

I increased the cook time to 52 minutes - the rice was fully cooked and had absorbed all of the moisture. This is an excellent low-fat meal that I will be sure to cook again.

Tasty Sweet Potatoes

This recipe provides a side item with a sweet flavor. Also, it is healthy food, being low-fat with antioxidant-rich sweet potatoes and raisins. I liked the recipe enough to use it twice so far. Thanks, Tali, for sharing this recipe.
