Iced Pumpkin Cookies

These were soft, moist and delicious. In addition to the listed spices, I also added some pumpkin pie spice - only because I really like a more intense spice flavor. I didn't end up with three dozen as the recipe states, but I'm sure it's because I made much larger cookies. Had plenty for my family and to share as Christmas gifts.

Rich Chocolate Truffle Pie

Delicious and very easy to make. Used a crust made of crushed Oreos and melted butter. Topped with Cool Whip. My family (chocoholics) loved it.

Downeast Maine Pumpkin Bread

Made this today & it was delicious! I didn't have three of the exact size pans as called for, so I used two slightly larger pans and had to cook them about 15 minutes longer than the recipe said. Also added coconut only because I love it & usually put it in my banana bread recipe. Also made the vanilla glaze recipe found on this site and added a little more coconut and chopped walnuts in my glaze. My entire family loved it - even my three year olds. Next time I will add walnuts to the bread.

Eggnog Cheesecake III

Egg and Sausage Casserole

I cut this recipe in half (except for the sausage that I ended using just about all of) since I was making this for a smaller group. I also added onion. It was delicious and my children loved it. I didn't bake the crescent rolls ahead of time like some reviewers did & had no problem with a nice crispy casserole bottom.

Fresh Broccoli Salad

Used sunflower seeds instead of almonds. Made it the day before so the broccoli could marinate in the dressing but waited to add bacon and seeds until just before serving so they would stay crispy. This made a lot!

Frosted Cranberries

These were so easy to make & looked absolutely beautiful on top of the pumpkin/coconut/pecan cake with cream cheese icing. My 3-year-olds actually ate them by themselves.

Like other reviews, I added a small bit of vanilla. These turned out very good. Cooked them in a little shortening to get the edges crispy.

Quick and Easy Alfredo Sauce

This was good and rich. I cut the cream cheese by half and still found it a little rich for my taste. Will make again with a little tweaking. Used with angel hair pasta and added broccoli as a side dish with baked fish.

Baked Apricot Chicken

I made this but without the french dressing. I used a little italian dressing instead, but not a full cup because I wanted the sauce to be thick and stick to the chicken, not run off like some other reviews I read. It was very tasty. Husband and son liked it too. Definitely a way to change up chicken. Will make again.

Gnocchi Bake

I made this last night but used ground beef because that's just what I had on hand. Family loved it. Added a little shredded parmesan in with the mozzarella cheese to make it extra cheesy. Will make again. It's easy and was enough for some leftovers.

Mayonnaise Biscuits
