Downeast Maine Pumpkin Bread

Reviewed: Oct. 19, 2013
Made this today & it was delicious! I didn't have three of the exact size pans as called for, so I used two slightly larger pans and had to cook them about 15 minutes longer than the recipe said. Also added coconut only because I love it & usually put it in my banana bread recipe. Also made the vanilla glaze recipe found on this site and added a little more coconut and chopped walnuts in my glaze. My entire family loved it - even my three year olds. Next time I will add walnuts to the bread.

Egg and Sausage Casserole

Reviewed: Oct. 22, 2013
I cut this recipe in half (except for the sausage that I ended using just about all of) since I was making this for a smaller group. I also added onion. It was delicious and my children loved it. I didn't bake the crescent rolls ahead of time like some reviewers did & had no problem with a nice crispy casserole bottom.

Rich Chocolate Truffle Pie

Reviewed: Dec. 10, 2013
Delicious and very easy to make. Used a crust made of crushed Oreos and melted butter. Topped with Cool Whip. My family (chocoholics) loved it.

Sugar Coated Pecans

Reviewed: Aug. 21, 2013
I left out the cinnamon and added a dash of vanilla to the egg white/sugar mixture. I make these during the holidays for family & friends.

Banana Coconut Loaf

Reviewed: Oct. 19, 2013
Made this for my bible study group & everyone loved it. I left out the cherries (just not a fan of them) and served it warm. Yum!

I made this last Christmas and everyone loved it! It's a great holiday twist to the already-wonderful cheesecake. The rum makes it!

Creamy Chocolate Frosting

Reviewed: Dec. 10, 2013
Delicious and easy to make. I had never made chocolate frosting from scratch - and had only made regular buttercream twice before - and it came out perfectly.

Garlic Prime Rib

Reviewed: Jul. 27, 2013
I have made this recipe almost a dozen times, typically around the holidays and it always turns out great. I use rosemary instead of thyme just as a personal preference.

Fresh Broccoli Salad

Reviewed: Jul. 27, 2013
Used sunflower seeds instead of almonds. Made it the day before so the broccoli could marinate in the dressing but waited to add bacon and seeds until just before serving so they would stay crispy. This made a lot!

Frosted Cranberries

Reviewed: Dec. 10, 2013
These were so easy to make & looked absolutely beautiful on top of the pumpkin/coconut/pecan cake with cream cheese icing. My 3-year-olds actually ate them by themselves.

Iced Pumpkin Cookies

Reviewed: Dec. 19, 2013
These were soft, moist and delicious. In addition to the listed spices, I also added some pumpkin pie spice - only because I really like a more intense spice flavor. I didn't end up with three dozen as the recipe states, but I'm sure it's because I made much larger cookies. Had plenty for my family and to share as Christmas gifts.

Warm Crab Parmesan Dip

Reviewed: Aug. 30, 2014
Made this for game day & everyone loved it. Read a LOT of reviews and decided to make the following revisions: added a tsp of worcestershire, a sprinkle of Old Bay, salt & pepper and cut back on the parmesan to 1 cup but added a half cup of mozzarella. Used fresh crab claw meat from the fish counter at my grocery store. Also sprinkled a little more mozzarella on top before baking. Served with both Stacy's parmesan, garlic & herb pita chips as well as garlic toast.
