After 20 years of working in the corporate world, I am now a stay-at-home mom of three beautiful boys. Nothing makes me happier than making something new and my family really loving it!
My favorite things to cook
My absolute favorite day for cooking is Thanksgiving. I cook the entire spread for our extended family. It is a lot of work and days of preparation but it makes me so very happy and satisfied to make this meal for everyone.
My favorite family cooking traditions
My mom was and still is the best cook ever. True southern cooking. She had a knack for making something out of nothing.
My cooking triumphs
I don't know if these are truly "triumphs" and certainly anyone can make them, I just know these are things I do well and enjoy making: Garlic prime rib; pumpkin/coconut/pecan cake with cream cheese icing; squash casserole; buttercream frosting; white chocolate bread pudding; fudge; sweet potato casserole.
My cooking tragedies
I'm Southern but still can't turn out the perfect biscuit. Don't get it.

Baked Apricot Chicken
I made this but without the french dressing. I used a little italian dressing instead, but not a full cup because I wanted the sauce to be thick and stick to the chicken, not run off like some other reviews I read. It was very tasty. Husband and son liked it too. Definitely a way to change up chicken. Will make again.

Gnocchi Bake
I made this last night but used ground beef because that's just what I had on hand. Family loved it. Added a little shredded parmesan in with the mozzarella cheese to make it extra cheesy. Will make again. It's easy and was enough for some leftovers.

Iced Pumpkin Cookies
These were soft, moist and delicious. In addition to the listed spices, I also added some pumpkin pie spice - only because I really like a more intense spice flavor. I didn't end up with three dozen as the recipe states, but I'm sure it's because I made much larger cookies. Had plenty for my family and to share as Christmas gifts.
