Mahi Mahi with Onions and Mushrooms

We were excited to cook the mahi mahi my husband caught in Florida and brought back home. This recipe rivals the restaurants in Key West. Great flavor. I served it over pearled couscous, and added spinach. I am going to make this for company next time. I will double the sauce ingredients. I did shorten the cooking time on the fish to 4 minutes the first side and 3 minutes the second, and it was perfectly cooked. This one is a keeper!

Roasted Beets and Sauteed Beet Greens

This was good. I made as directed the first time. The beets took longer to cook than I thought. The second time I wrapped each beet individually in foil after rubbing olive oil and salt and pepper on them. That seems to work a bit better. The big standout though were the beet greens. Who knew they were so good? I asked my mom and friends if they had ever eaten beet greens. Nobody had! I added shallots to the onion and garlic sautee. Very very tasty. I wish I could buy the greens by themselves.

Honey Baked Chicken II

Very yummy! I made as directed except I did reduce the butter by half as other reviewers suggested. It turned out moist and very flavorful. It was a hit at our party.My husband suggested that next time I sprinkle sesame seeds over the cooked chicken. I will definitely be making this again and again.

Juicy Roasted Chicken

Very juicy! I used butter because margarine is not a real food. I followed other suggestions such as melting butter with the seasoning and then brushing that on the dried skin inside and out.Inside was celery, lemon, rosemary. I tucked roasted garlic under skin and I then seasoned some more with Montreal chicken. My birds were almost 6lbs each. I started at 450 degrees for 15 minutes. Then cooked 20 min. per lb until 160 degrees. Crispy skin which is my favorite part and very juicy meat. Got rave reviews at dinner party. The best part is that I cooked two so I have another meal ready to go or to freeze.

Vanilla Ice Cream VI

I altered this a bit by substituting milk with 4c. half and half and 2c heavy whipping cream. Left out water as other reviewer suggested. This was very creamy and delicious. Big hit with both kids and adults at our party. Recipe size fit perfectly in my electric ice cream maker container. Five stars as I made it with alterations, only four stars as written because I don't like the iciness.

The yogurt marinade is wonderful and keeps chicken so moist. I am about to make it again. Big hit first time. I eyeballed the spices last time and will add way more this time.

Mom's Best Pork Chops

Awesome! Big hit with. I used Panko instead of saltines. Very crunchy on outside, juicy on inside. I used thicker cut, bone in chops. Only baked for 20 minutes after the pan frying and they were perfect.

Thai Style Shrimp

Very flavorful. Took a bit longer to prep than stated. Other reviewers had trouble getting spice paste in blender, so I used a mortar and pestle. It wasn't a paste but it melded together. I upped the spices a little bit and added curry too. I put it over chinese noodles. It tasted like in a restaurant. I will definitely be making this again.

Baked Pork Spring Rolls

My husband gave these a five. I loved the filling and they did turn out crispy. I found that the texture of wrap was slightly papery. I did take suggestion of using cole slaw mix which makes this doable in a shorter amount of time. I think I will make this again for a party. Tasty and healthier than frying!

Egg Noodles

Yummy noodles. This was my second time making noodles by hand, no pasta machine roller. I rolled the dough as thin as I could ( it is pretty dense) with rolling pin and used pizza cutter to cut thin strips. Much better than first time which was too thick and wide and doughy. I will double recipe next time as it was only enough for two or three.

Chocolate Chip Meringue

These are awesome. I did get the egg whites to peak, but after I slowly added the sugar, etc. I was unable to get it fluffy. I was worried when I put them on parchment paper that they would flatten, but much to my surprise, they fluffed and mounded into a nice looking cookie. I did cook them longer like the other reviewer suggested. I would like to know how long to beat the mixture because I just kept going even when I thought it was too long. These are exactly how I remember my Mom making when I was little. It has a toasted marshmallow taste thats addictive. Love them and so does my husband Two thumbs up!

Grandma Reid's Stuffing

Big hit! I used spicy sausage and followed recipe. The only thing I added was the can of chicken stock over mixture which I think helped with moistness without being soggy. I left my bread cubes out over night to dry out. I think if you use fresh bread it would be soggy. I got lots of compliments. I cooked it in a pan, not in turkey. I stirred halfway through. I will be making this again.

Sweet Potato Bread II

I reduced sugar to 2c, and substituted 1/2c. unsweetened applesauce and 1/2c. coconut oil for the 1c. oil. I didn't have orange jiuce, but I did have tangerine/pineapple blend. I also added dried cherries and slivered almonds to batter. I also added a small amount of flaxmeal. I sprinkled brown sugar on top and made 24 muffins. I baked for 25 minutes. Out of the oven, they were moist and not too sweet. Perfect! This recipe is a keeper.

Indian Shrimp Curry

This was my first try at curry shrimp. I think it needed more spices because I might have thrown the ratio off when I added more coconut milk. I wanted more sauce, but it wasn't as flavorful as it would have been with the stated amount of coconut milk. My fault. I'll just bump up spices next time. I'd definitely like to try it again. Very yummy with naan to sop up sauce with.

Baked Buffalo Wings

While these didn't taste bad and everyone ate them, they were very bland. Not sure if it was all that butter diluting the hot sauce or just not enough spices (I added more than called for). I drained the butter that the wings were drowning in halfway through cooking when I turned them. Not my favorite, and I was really looking forward to HOT wings. Oh well, I'll try another recipe next time.
