Vegan Agave Cornbread Muffins

Reviewed: Jan. 8, 2013
Oh my... these are great! Just whipped up a batch to go with my vegan chili. If you like sweet cornbread, you will like these. I also made it with maple syrup instead of agave (that's what I have on hand). Thanks for the recipe!

Balsamic Chicken

Reviewed: Nov. 25, 2010
This was a wonderful, simple, healthy dish - my husband and I both loved it. I followed the recipe almost exactly (didn't have Italian seasoning, so subbed 1/2 tsp each of thyme and oregano; also, I cut 3 breast halves into cutlets instead of 4 breasts). It came out great. My favorite part about this is that all the ingredients are in your pantry, and I always have chicken breast in the freezer, so I can decide to do this on a whim with no grocery trip. Need more recipes like that!

Spinach and Feta Turkey Burgers

Reviewed: Nov. 8, 2010
I thought this was great! I love classic beef burgers, so I am always skeptical of a turkey burger, but this was delicious and quite healthy. As others suggested, I also added a dash of Worcestershire sauce, and used tzaziki sauce as the condiment. The mix was rather mushy as others noted. I didn't want to wait for them to chill and firm up, so I just tossed in a good dose of wheat germ to make them stick together better. (I halved the recipe and needed about 4 tbs of wheat germ.) I will definitely make this again :)

Peach Cobbler II

Reviewed: Sep. 11, 2009
Success! I made the same modifications others suggested. (Doubled the peaches, used only 1 cup of sugar in them, and reserved the sweet liquid from the peaches to use over the top of everything instead of boiling water.) I am not really into cobbler, but my husband seems to love it, so I'm sure I'll be making it again for him!

Bulgogi (Korean BBQ)

Reviewed: Sep. 11, 2009
Yum! Made this tonight with jasmine rice and loved it. I did also use half the soy sauce (light) and double the pineapple juice. Cooked it with the broiler and reduced the leftover marinade for a little sauce. Will definitely make this again soon... I'm only giving it 4 stars because I modified it. As modified, I thought it was a 5!

Raspberry Sauce

Reviewed: Aug. 24, 2009
Very nice! I used this over cheesecake, and it was lovely. I also used the frozen raspberries, and simply garnished the cheesecake slices with fresh ones. I would actually make less of it next time -- it was about 2x as much as you'd need for a cheesecake, and I have no idea what to do with the rest! I do agree it is not very sweet, but the cheesecake took care of that, so the balance was nice. Will definitely make it again though -- thanks for sharing!

Pollo (Chicken) Fricassee from Puerto Rico

Reviewed: Aug. 11, 2009
This reminds me of my dad, who was from Puerto Rico. He made the most delicious chicken fricassee. It wasn't exactly the same as I remember, but I think what's missing may just be the love :) Thanks for sharing!

Pasta Primavera with Italian Turkey Sausage

Reviewed: Aug. 11, 2009
This was really just ok for me. Pretty good for a healthy meal, but it did not blow me away as others seem to have been blown. I don't know if this has been mentioned, but I have never seen a skillet that could accommodate this much food! It was a ton! Luckily I had a large foil roasting pan to "assemble" it all in at the end. Of course, this also means I had a LOT leftover. I froze individual portions, and to be honest I was pretty sick of it by the time it was gone. I probably won't make it again. Sorry!

Taco Seasoning I

Reviewed: Aug. 9, 2009
Very good. Who knew it was so easy? I added a bit of corn flour and cornstarch, but dunno if I needed to. Will definitely make lots of it to have on hand for taco night.

Pico de Gallo Chicken Quesadillas

Reviewed: Apr. 2, 2009
The taste is lovely and fresh -- I love it. However, I am quesadilla challenged, and had lots of trouble with "assembly" ! I've made this a couple of other times, and found that putting all the veggies in the food processor and shredding the chicken more makes it all stay together better. I'm sure there are more tricks... But they aren't in the recipe :)

Shrimp Fettuccine Alfredo

Reviewed: Apr. 2, 2009
Loved this! Followed recipe exactly, and it came out great. I loved that it wasn't swimming in sauce -- just enough to cling to the pasta. And honestly, it didn't seem THAT bad for me. Will definitely make it again... hmm... maybe tomorrow...

Dirty Rice

I'm afraid I have to differ! It was mush... and I followed the directions exactly. It was spicy, but there was no TASTE at all. I hate wet rice.

Arroz con Pollo II

Reviewed: Jan. 13, 2002
Ahhh... just like dad used to make!! (He was Puerto Rican) I never got his recipe & now I can't, but this brought back memories of when he would do the cooking after school! I used water instead of beer cause I only had a superthick, dark variety of beer on hand (and no chicken broth) and it was delicious. And as others said, it did take longer for the rice to cook, but it was worth the wait.
