Sweet and Sour Brisket

Reviewed: Aug. 12, 2012
I altered the recipe by adding chunks of bell pepper prior to going in the oven, but otherwise followed the recipe to the letter. It tastes amazing and it got rave reviews from my guests, but I personally think that the recipe makes a bit too much sauce and the sauce is a bit too thin. Next time, I will: 1) Reduce the amount of sauce by 25% 2) Add cornstarch during the boiling 3) Add some pineapple. I will also clarify from the prior review that the "Chili Sauce" is a ketchup-like sauce sold in a glass bottle and it is only very slightly spicy. I personally prefer Heinz's product.

Amazing Simple Thai Tofu

Reviewed: Sep. 10, 2004
I found this recipe very simple and fast. I liked the fact that it used mostly ingredients I already had around. The prep time was minimal and the cooking time was brief. I cook at a student cooperative house full of 20 hungry college students, so I scaled the recipe to 10 times its published size and used a large wok with excellent results. I found that the finished product was somewhat bland, so I added a bit of extra ginger and a pinch of cayenne, which gave it some needed extra kick. I also found it to be a bit dull and colorless, so I added some grated carrots, which gave it needed crunch and color. With my modifications, my housemates gobbled it up and made me promise to make it again! I recommend serving with rice.

Black Bean Vegetable Soup

Reviewed: Feb. 20, 2003
Really good recipe that turns out well. I think that the recipe could use a bit more "oomph," so I use more chili powder and cumin, but this is a great comfort food recipe. Also, I find that cooking it a bit longer makes it thicker, which I like.

Easy Hummus

Reviewed: Apr. 9, 2002
The recipe is easily scalable to much larger amounts. One thing I noticed is that in larger amounts, it started to get a bit too thick for the food processor to handle. My solution was to add a bit of crushed ice and water. It came out creamy and really good. Incidentally, I used dried garbanzos soaked overnight and boiled 3-4 hours instead of canned.

Best Brownies

Reviewed: Jan. 13, 2002
First, the recipe is AMAZING. Now, let me share a few experiments. 1) I reported that the recipe could successfully be made vegan by substituting 1 banana for 2 eggs. That's WRONG. That was a different recipe. If you do this, you'll get chocolate tar, not brownies! Powdered egg replacer is a bit better, but the brownies don't rise like they should. 2) I tried adding chocolate chips to it but what happened was that they just sunk to the bottom of the pan while it was baking and didn't add much to the flavor. 3) I melt the butter in a large saucepan and then add the rest of the ingredients to the melted butter. ADD THE EGGS LAST if you do this or you'll cook the eggs before they get mixed in. 4)Butter or margarine both work just fine, but the flavor and texture is a bit different. 5) I actually multiplied the recipe by 4 and it still works, although it needs another 10 minutes or so in the oven.
