Buttermilk Honey Wheat Bread

Why does this recipe have baking soda? I have never seen a yeast bread recipe with baking soda... so I completely omitted it. The bread came out wonderful. I did end up adding about 1/4 cup flour to the recipe to get the dough to the consistancy that I'm used to. I then just put it in my bread machine on the regular white setting, and the bread came out really well. I made 2 loaves in my 2 bread machines. I ran out of honey, so I used some Agave sweetener in place of the honey in one of the loaves. The bread came out just as good with the Agave as with the honey. I guess my suggestion is to add some flour and omit the unneeded baking soda.

Addictive Sweet Potato Burritos

I made this with a 16oz bag of black beans (cooked on stove per directions) and then I put the beans in a food processor before mixing with the garlic/onion mixture. These are actually quite good! Will be making again!

The Best Banana Bread

I did modify this recipe to make it more healthy for my daycare, but not enough to completely change the recipe. I used whole wheat flour, 3/4 cup honey instead of the sugar, 1/4 apple sauce + 1/4 cup canola oil instead of the margarine. The kids LOVED it and it turned out really nice. The parents tried it, what was left (not much!!) and they couldn't tell that it was low fat/lower sugar at all! This recipe uses less banana's than my usual recipe but it's almost as good. A keeper!

Cottage Cheese Chicken Enchiladas

Warning: I made some changes! We loved the cottage cheese/sour cream mixture! I used fage greek non fat yogurt instead of the sour cream. Then I simplified this by just using taco seasoning with the cooked chicken and adding in some salsa. Cook on the stove like taco meat. I combined this recipe with another recipe...stuffing cooked manicotti shells instead of the tortillas. Top with cheese and left over chicken mixture and bake as directed. I credit this recipe for the cottage cheese mixture idea :)

Slow Cooker Sweet and Sour Kielbasa

I had to modify this for a quick stove top meal, but the kids loved it! I did halve the ketchup as suggested and I also halved the sauce recipe as a whole. I boiled the kielbasa first in water on the stove top. Then I mixed the sauce together (I was out of cider vinegar so I used regular vinegar) and I also used regular mustard to tone it down for the kids in my daycare. I left out the onion and didn't use any hot sauce..which made this sauce a lot like a ham ball sauce. I cut the kielbasa into coins then halved the coins and simmered the sausage and the ketchup concoction on the stove for about 30 min., the last 10 min. I covered the sauce so that it wouldn't get too stiff to pour over noodles. The kids really liked it! I served it over wheat noodles. will make again sometime..it was quick and easy. Would probably be even better in the crock pot!

Veggie Corn Dogs

Kids LOVED these. I used low fat wheat biscuts and organic nitrate free dogs. Make sure to flatten the biscuts really well and make them into an elongated oval shape, that way the biscut will cook through and it will fit the length of the dog. On ones that I didn't flatten enough into the elongated oval shape, the dough didn't bake all the way through. Perfect on the ones I pounded thinner though :)

Health Nut Blueberry Muffins

VERY tasty. But mine came out purple...I'm not sure what I'm doing wrong, I use organic frozen blueberries and my blueberry muffins always turn out purple/blue. The blueberrys were nicely suspended, however.. I would not fill to the top of the cup as the recipe stipulates, mine ran over. Also, I had to bake mine about 2X as long as the recipe stipulated. The taste is worth it, I just wish I could get mine to look like the pictures! These will still work for my daughter's Waldorf preschool birthday celebration...Might scare off some kids because of the color, however. I hope THEIR parents have trouble making normal looking blueberry muffins also (so the kids will be used to the weird hue)! :)

Banana Banana Bread

I made this recipe low fat and low sugar. I used 1/2 cup applesauce in place of the butter and just added 1/8 cup oil. I also only used 1/4 cup of the brown sugar and added 1 tsp vanilla and 1 tsp allspice. My kids love this! Wonderful recipe. I buy ripe banana's when they are available at the store and mash and freeze them in 2 1/3 cup servings in a zip lock. Also great as mini muffins.

Light Sweet Potato Casserole

I followed suggestions and only put one tablespoon of brown sugar instead of 2 and I added more cinnamon to taste. I also topped it with crushed walnuts. My guests loved it!
