Bev's Orange Chicken
This was quite tasty. The only thing I did different is that I doubled the orange juice and soy sauce. Don't double the soup mix, too salty. I used a low sodium soy sauce too. It made a lot of liquid at first but it really cooked down into a flavorful sauce. I kept drizzling the juice over the top of the thighs every 30 minutes or so. The whole family enjoyed it.

Double Tomato Bruschetta
Very tasty! I used crumbled goat cheese on top instead of mozzarella. I didn't have the sun-dried tomatoes but will try it with next time. I let the tomato mixture sit for several hours before preparing. Will definitely be making this recipe again.

Cube Steak Parmesan
I love the idea of this recipe but the cube steaks were quite tough. I think they were overcooked. Maybe if you just fried the steaks and put them in the oven with some sauce just long enough to melt the cheese. I seasoned the steaks before I battered them, used seasoned bread crumbs and a jarred marinara. They would've been great if the meat wasn't so tough. I made some homemade spaghetti noodles with the marinara as the side.
