Originally from Kingston Jamaica, but pretty much raised in Atlanta all my life. I've been baking since before i can remember and these past few years have been a transition--honing in on my love of creativity & sweet treats into the art of cooking! I've been loving it, i get a natural sense of what works from my mom who is phenomenal! So as I seek to catch up to her, I need all the help I can get! :) I want to move from the "Easy Quick Meals" that i'm used to and Master the "Home Cooked Meal" the 1-3 hour recipes that make it all worth while! So i'll be posting alot of new recipes as i learn and Master real Jamaican food...this, has been long overdue!
My favorite things to cook
Easy Meals-Burritos, Quesadillas, Lasagna, Barbecue Baked Chicken, Mac & Cheese, Burgers, Mashed/Baked Potato, Baked Beans, Stir Fry, Those are the usual, in between i love to experiment and try my hand at new things!
My favorite family cooking traditions
Mmmm... Jamaican Food-- Rice & Peas w/ Curry/Fried/Jerk Chicken; Curry Goat; Split Peas/Chicken Soup; Turkey Neck; Oxtail; Fried Fish & Bammy/Fried Dumpling/Festival; Boiled Banana, Dumpling & Sweet (Boniato) Potato, Pumpkin.
And of course I have to give props to the Traditions we've picked up here in the States: Lasagna (Traditional & a variation with fettucine, spinach & chicken), homemade pizza, Shrimp & Rice (which we spice it up with coconut cream (sooo..good!)) Turkey, Honey Ham(gotta have it, every major holiday) Pork chops, BBQ Ribs (yum!)
My cooking triumphs
Mom's Honey Ham, last Year!!!
My cooking tragedies
I've had dishes come out very "average tasting" or on rare occasions, over seasoned- those irk me but no disasters.
