Sweet Potato Casserole II

I made this recipe as directed except I reduced the amount of sugar mixed into the sweet potatoes by half, and used brown sugar instead. Everyone loved this dish at our Thanksgiving dinner, and requested I make it again at Christmas! I can see this becoming our go-to recipe when making sweet potatoes in the future. Sure beats the marshmallow yuck I've had in the past!

Campbell's® Pennsylvania Dutch Ham and Noodle Casserole

I made this pretty much as is, and it was, as others have commented, rather bland. I added garlic powder and pepper liberally, and milk to make it creamier, but it still wasn't very tasty. I wonder if adding some vegetables would help it; or possibly some other kind of soup (cheddar, maybe?). Anyway, I might make this again, trying a few things to make it more palatable.

Tater Tot Casserole II

This was a great side at our cookout. I didn't have the French-fried onions, so I didn't mix the cheese in with the other ingredients but used it as a topping. I also didn't use the whole 16 oz of sour cream...probably more like 8 oz. Everyone loved it! I will definitely make this again.

Turkey Polish Sausage and Peppers

I made this recipe this evening with veggies from our garden. I added 1 yellow squash and 1 patty pan squash but omitted the mushrooms. This was soo good!! I love all the veggies, and the kielbasa makes you feel like you've eaten a hearty meal. I wouldn't have thought the steak seasoning would add so much, but it did. I used about a half of a tablespoon and the flavor was great!

Eggplant and Zucchini Casserole

My family loved this recipe. Because of an overabundance of squash in our garden, I used a combination of zucchini and yellow squash. In an effort to lower our fat intake, I didn't use the butter in the stuffing, but didn't miss it a bit! This is a great way to get more veggies into my family's diet in a very tasty way. I will definitely make this again!
