Pizza Pinwheels

These were so simple to make, I doubled the recipe and brought them to an office pot-luck, served room temperature. They were the first thing to go!

Blue Cheese Ball

Potato Leek Soup III

This was my first time making this type of soup and I have to say I did not care for it. There was so much butter, that there was a layer of grease on top! Also, it was very watery. Not sure if it was this recipe, or just the type of soup I do not like. My husband, however, asked for seconds.

Tomato Leek Tarts

I made this for a Christmas Eve buffet-style dinner, and it was a big hit! The flaky pie crust made a great base, and the combo of cheese, leeks and tomatoes was savory and flavorful. This gets extra credit for being super easy as well!

Fruited Wild Rice Pilaf

This dish was OK - I made it in my rice cooker, which took some of the guess work out of it. The flavors complemented each other, but it was missing some pizazz. I even used chicken broth for the liquid, but there still was not a lot of flavor. Maybe next time I will add some dried fruit (cranberries?).

Creamy Au Gratin Potatoes

This was easy to make, but tasted so good! I did not include onions, however I will next time - it just tasted like it was missing something without them. I made this with Yukon Gold potatoes (4 large).

Jamie's Cranberry Spinach Salad

The dressing is what made this salad! I did not use poppy seeds, but otherwise stuck to the recipe. This makes a ton, too - it was perfect for an office pot luck lunch. I'll also serve it with Christmas Eve dinner, which includes a pork loin and wild rice with cranberries.

Curried Hummus

This is a great alternative to "regular" hummus (which I make quite often). I added a bit more oil than is called for, as I prefer my hummus more smooth and creamy. But otherwise, excellent!

Green Bean Blue Cheese Salad

I made this as a non-traditional green bean side dish for Thanksgiving, and it was a welcome change! It was nice to have a cold side dish for a change, and the cheese and nuts really complemented the other items. I will say that the dressing this recipe made was about 4 times more than I needed - I made it all, but ended up tossing a lot of it. I'll cut the quantities down next time for the oil & vinegar.

Spanakopita

I made this for an office pot-luck, and it was a hit! I had a problem where my layers did not "stick" together, so the spanakopita got a little messy when serving. But it was so tasty, who cares??

Brown Sugar Cream Cheese Frosting

To me, this just tasted like whipped-up cream cheese, not frosting. That being said, I did omit the honey, though I cannot imagine that would have helped much. It did add something to my cake, a cinnamon-swirl sheet cake, but I only had enough to frost half of it...maybe a good thing?

Pesto Cream Sauce

This sauce was easy to make, and quite good. It came out oily, though - could be the brand of prepared pesto I used. Next time, I will add less oil.

Husband's Delight

This recipe was great - I made it with veggie "ground round" instead of beef, and added some seasonings (italian herbs, paprika, garlic powder, pepper). It was also easy to make, with ingredients I always have on hand!

Grilled Peanut Chicken

This recipe was OK - the sauce was very thick (I added some watter to make it more sauce-y) and it stuck to the sauce pan, rather than coat the chicken. Would probably work much better on a grill, as indicated.

I did not have any soy sauce, so the recipe probably would have been a lot better without it. But it was still good, with some Asian fish sauce substituted. Served with a peanut-sauce chicken.

Black Bean and Rice Enchiladas

I made this recipe as described, except instead of using rice, I used veggie crumbles (like ground beef). I served it with spanish rice on the side. It was very tasty!

Fig and Ricotta Crostini

I have never tried figs before, and bought them on a whim at the grocer - this was a recipe I found that sounded tasty...but it actually did not have very much flavor. I used a lot of balsamic vinegar drizzled on top, and even tossed the diced figs in olive oil, but it was just ok. It certainly looked pretty, though!
