Ghirardelli® Individual Chocolate Lava Cakes

This is very good. Definitely need ice cream with it and a glass of milk. It is bitter chocolate so be prepared for extra dense flavor. I did find that the chocolate in the middle did not firm as others stated. A visit to the freezer helped that. Best part of this cake was I made the batter, put it in my ramekins, placed them on a jelly roll pan, covered them, and put them in my refrigerator before dinner. Well, we were so full from dinner, I ended up not cooking them...for two days! I pulled out the pan and put it on the counter to warm it up, I put my frozen chocolate balls in the middle and cooked it for the fifteen minutes as stated. They came out perfectly. This is a great recipe for a dinner party since I can make the majority of it an advance! Thanks!

Sopapilla Cheesecake Pie

I don't know what I did wrong here but this wasn't good at all. Being that everyone loves it on this site, I can only assume it was my fault. I couldn't eat it at all. I wonder what I did wrong....

Danish Pastry Apple Bars

This is a really simple and delicious dish! My kids loved it and I will make it again. I made it just has directed. Only thing I would say in the instructions is to place it in the pan like a pie crust with the bottom crust going up the sides. I just laid it on the bottom and then realized I had to seal it to the top crust. I had to dig for my edges. It was still fantastic! Thanks Nancy!

Donut Muffins

These are really good and so easy! Best thing is that if you don't have eggs, you can still make a good dessert. I made them following the directions first, and then, because I wanted them to taste more like my donut holes that I make and changed the spices a little. I added equal portions of nutmeg, mace and cinnamon. I also added a little salt, since that is what keeps you coming back for more! I made 4 recipes and there are none left in one day! Crazy!

Spaghetti Carbonara II

YUM!!! This was the first time I made Carbonara. I didn't know about the eggs and really questioned if I wanted to do it at all. But I had the ingredients and did it! I pretty much followed the directions. I might have use a bit more bacon. I also didn't have onion so used 4 shallots. I followed some advise of other chefs and mixed my parmesan with my eggs. I also added a little cream since I had it in the fridge and needed to use it up! I finally added frozen peas right at the end. This was amazing! LOVED IT! My husband told me to make this over and over again!!! Thank you so much for this recipe! One comment. I know that alot people don't like when you change up recipes. But I find that when I am missing an ingredient, I like to read and see if someone substituted and if it works. I think it is great to add individual interpretations of a recipe as long as it follows the orginial concept.
