Meatball Nirvana

I followed this recipe exactly except I used 93/7 ground turkey because of the lower fat content and I also did not add any garlic salt or any salt as there is enough in the grated cheese and wrochestershire sauce and the seasoned bread crumbs. I divided the finished product into 4 equal portions, froze the other 3 turkey burgers individually and had this wonderful spicy, tender turkey burger that I will be making from now on! If anyone is interested, it comes out to 7 Points Plus on the Weight Watcher program. Definitely a keeper. Over the top delicious!!!!!

Jennie's Heavenly Slow Cooker Chicken

I have to say this made a terrific "soup", the sauce was heavenly but the chicken was bland. I should have sprinkled some salt and pepper on the chicken first. I was scared away from the reviews that said it was too salty, so I used half of the packet of dry Italian salad dressing mix, wine instead of chicken broth and low sodium worchestershire sauce, this might have been a mistake but I always enjoy finding new challenges on this website. I will do it differently next time. Thanks for the recipe.

Fluffy Two Step Cheesecake I

No fuss, easy, wonderful and no cooking involved. Great dessert to make with this awful heatwave going on now. I used 1/2c sugar and 2- 8oz pkgs of lite cream cheese also and lite cool whip too! Thanks!!

Chicken with Stuffing

What a wonderful, comforting dish this is! I seasoned the chicken, dredged it in flour, browned in a little olive oil, put a bag of frozen peas and carrots in the bottom of the slow cooker, put the chicken on top along with healthy request cream of chicken soup (Campbells) and topped with chicken flavored stuffing with low sodium chicken broth in place of the water. YUM YUM YUM!! Fantastic recipe, will be making more often, thanks so much!!

BEST EVER Mac and Cheese

In the interest of cutting down on the fat I used fat free sour cream, 1% milkfat cottage cheese, 2% reduced fat shredded cheddar and smart balance spread (1/2c) and omitted the can of whole tomatoes, I have to say it was just awful! I was curious, being with Weight Watchers and I can say it was definitely a waste of points, how many, I don't have a clue, I didn't eat much of it and will have to throw it out. I have come to the conclusion that the only way to have this is with the full fat ingredients, low fat and fat free do not do this justice. The best recipe on this site, "Moms' baked macaroni and cheese" is hands down the best!! I will just have to go back to that one and have it only occasionally. Oh well, live and learn!

Eggplant Parmesan II

I have been making eggplant parmesan in a casserole dish and layering with sauce and cheese for years, but lately, using this recipe, I take a medium eggplant, sliced about 1/2 inch thick, sprinkle both sides with garlic powder, italian seasoning, coarse ground black pepper and seasoned salt lightly. I dip each slice in 1/4c egg substitute and 1 egg white, then coat with italian seasoned bread crumbs to which I add about 1/4c grated parmesan cheese. I spray a baking sheet with canola spray, put the slices on it and spray the top of the slices with more canola spray. I bake it for about 20 minutes in a 425 degree oven, flipping over half way through. Then I take it and cut it in pieces and dip it in either hot marinara sauce or light ranch dressing, absolutely delicious. It is like going out to restaurant and eating breaded vegetables as an appetizer. Just my take on this and it is much lower in fat and good for you too! I love this stuff!!!!

Aunt Mary's Eggplant Balls

I made these today and I can say they are divine! I shaped them into 9 nice sized "meatballs", baked them and put 1 cup of Prego Heartsmart spaghetti sauce on them with a topping of 2 tablespoons of grated Parmesan cheese. It just blew me away!! Next time I will make them into "burgers". Thank you so much for this wonderful recipe Lynette!

Chicken Cordon Bleu II

I just made this recipe and used reduced fat swiss cheese, fat-free half and half and used 1/2c of chicken broth as I had no wine all in the interest of lightening up the recipe. I'm sure it would have been outstanding with the original ingredients but I am very much overweight and need all the help I can get! I have to say it turned out just divine!!! Thanks so much for this wonderful recipe!!
