Easy Chicken and Broccoli

I used steamed broccoli and added a clove a garlic, salt and pepper to the chicken. Turned out really good. Even the boy agreed. I cooked something very similar, without the can of soup, 2 nights ago. Quick, easy, and tasty. Thumbs up from us.

Baked Spaghetti with Chicken

Whoa! Fantastic with this twist. Preparation: 1) cube the chicken and season with McCormick's Steak Seasoning + chopped basil + olive oil. 2) Dice bell pepper, mushrooms, broccoli and onion. 3) Cook: Cook the chicken mostly through, add veggies and cook til soft. Pour in the spaghetti sauce, reduce heat to low, cover, and wait for spaghetti noodles to finish. 4) Add chicken mixture to cooked spaghetti in a large bowl. 5) Mix in 1/4-1/2 cup of mild sharp cheddar, combining everything. 5) Serve. Awesome, my son agreed, and we had everything on hand. Use proportions similar to 4 person serving. Just tweak the proportions using your best judgement. Easy and quick.

German Puff Pancakes

I halved the recipe. My review may not be fair, because the only thing I measured was the flour and eggs and cooked for 15 minutes. It wasn't good. Bland and gross texture. Too much flour taste. Maple syrup was able to mask the badness but I still choked down a few bites. My 8-yr old son said "No flavor" after two bites. This recipe needs something but I'm no chef.

Steph's Summer Salad

I like it too. I cooked everything separate for 10 minutes then combined in a large bowl with marinara. Prep time: 15 min; Cook time: 10 min - Broccoli (cut in small florets) - Chicken breasts (seasoned with Lemon Pepper) - Pasta (Barilla farfalle) - Warmed some Marinara while slicing the chicken into small chunks. Throwing everything into the bowl, and mix with serving utensils. Bonus: Serve with garlic bread.

Mexican Casserole

My son didn't like it, but I loved it. I put 1/4 cup of chillies, 1/4 of pace picante hot, some liquid from the corn/beans and added a cup of rice before the oven. crunched up a few taco shells i had and immersed them in the liquid in a layered approach.
