Methi Paneer
400 Grams Paneer ( Cube to desired size )
1 1/2 to 2 Cups Chopped Methi .
1 Medium Onion ( Chopped ).
1 Large Tomato ( Chopped ).
1 Teaspoon Garlic Paste.
1 Teaspoon Ginger Paste .
1 Teaspoon Jeera.
Haldi
Salt
2-3 Green Chilies ( left whole with a slit )
Ghee/Oil

Salt the methi  (1 teaspoon ) and set aside for 15 to 20 minutes . Squeeze out the juices , wash well and plunge into boiling water that has 1 teaspoon of sugar . The sugar will keep the methi nice and green . Boil one minute , drain and squeeze .

Now make your typical ' punjabi masaala ' - in hot oil first go the jeera , once it crackles add the onions till they are translucent and then the rest of the ingredients . Once the oil separates add the methi leaves and the green chilies . Cook well for 2-3 minutes and then add the paneer . Cook another 3-5 minutes for the paneer to take in all the flavors .
This is a beautiful blend of methi and paneer !

Allow me, Paneer = firm cottage cheese, Methi = fenugreek, Jeera = cumin and Haldi is tumeric. I'm going to make some paneer and give this a go, one question. All I have is dried Fenugreek, could I re-hydrate it, do I even need to? 2 cups seems a lot but perhaps fresh, its a different thing lol.
