Prawns Mango and Beans Salad

An amazing combination , visually a treat , as it is to eat too ! The crunchiness of the beans
marries well with the garlic infused prawns all wrapped up in the sweet and sour juice of mango !
1 Kg medium sized prawns shelled and cleaned .
1/2 kg Green Beans strings removed and cut into 1 inch size pieces.
2 large ripe but firm Mango cut into i inch sizes pieces.
15 cloves of garlic minced
juice of 2 lemons
Freshly ground black pepper & salt to taste .
I like to wash and soak my prawns in water ( 15 minutes and then wash again ) to which 90
ml white vinegar has been added to get rid of that very ' fishy ' smell . At this point I am normally whacked on the head by my Bengali buddies for even suggesting to do so ! The choice is yours how you handle your prawns !
Keep a bowl of chilled water at hand .
In another bowl of boiling water to which 1 teaspoon of sugar has been added (keeps greens green ) throw in the beans .
Within 20 seconds strain and plunge into the chilled water to stop cooking .
Beans should remain crunchy and green .
In a wok take 2 tablespoons of oil / chili oil- when hot throw in the black pepper and garlic . Stir for 30 seconds and add the prawns and salt. Saute prawns for 5 minutes until they are cooked . At this stage mix the green beans and lemon juice - stir fry
another minute , take off the fire and while still warm add the mango ( This will release the juices .) Gently mix well to coat the mango with all juices / flavours . Adjust the salt .
The salad tastes equally good regardless if the mango are sweet on tangy . Serve chilled on a bed of green salad leaves .
