Ok, I love this recipe! I make it all the time but I always double it. I never dip in butter then cinnamon and sugar. I just add a crumb topping. This time I wanted to try something different so I didn't double the recipe. I messed up and added twice the butter and thought they were ruined but it made them lighter! I sprayed the mini muffin pan and then covered the bottoms of the cup in cinnamon and sugar, then put about half a tsp of batter in and covered the tops with cinnamon and sugar. They came out great!! I don't know why anyone would dip them in butter, it is so much easier to just add the cinnamon and sugar before you bake them! With the crumb topping and made as small muffins, they are great too!
