I made this with a 4 pound pork shoulder roast and doubled the sauce ingredients. Cooked on low for 8 hours, then shredded it. Served over rice and used roasted broccoli for a side. Yummmmmm!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Nov. 11, 2012
I was trying to update my original review, but wasn't able to. Anyways, I was reading some of the comments where people said the seasoning didn't penetrate through the skin. I put the seasoning on the skin, under the skin and in the cavity, using the entire amount of seasoning on one bird. I did cut the salt in half and I'm glad I did. This was an amazing recipe & I'm so glad I tried it!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Reviewed: Sep. 23, 2012
This was wonderful. The spice was just right for us. The sauce was delicious. The lime juice & cilantro added a great pop to the sauce. I think I'd add a littl of the zest to the sauce next time, just for a little extra zing. But really, it is great as-is.

Slow Cooker Oats

Reviewed: Sep. 23, 2012
Fantastic! We really enjoyed this. I used 10oz of apple juice in place of the water & chopped, dried cherries because I didn't have raisins. I used 2 tsp cinnamon & 1/2 tsp pumpkin pie spice instead of a full tbsp of cinnamon. Glad I did it that way because I think it old have been too much for my taste. Due to time constraints, I started it on high for an hour then turned to low for three hours. It wasn't quite redy then, but after sitting in the fridge overnight, it was perfect.

Carrot Casserole

Reviewed: Sep. 23, 2012
Made this for Sunday dinner with the family. It was terriffic! I was nervous about he combination of cheese with the cream of celery sop, but it turned out great. I ran out of time making this so I did improvise a little by omitting the sautéed onion step. I used onion powder instead. After straining the carrots, I returned them to the pot I boiled them in & then mixed the soup and cheese in the pot. Super easy and didn't dirty any additional dishes. Also, I didn't add any additional salt and it didn't need it. Thanks Jane, for a great recipe.

Turkey Shepherd's Pie

Reviewed: Apr. 23, 2012
I loved that I could adapt this to what I had on hand. I used roasted chicken from last night's dinner. I used the stuffing to make a crust. I baked it 6 minutes and then assembled from there. I used a can of cream of onion soup. Added some garlic powder. Used about 2 cups of frozen mixed veggies instead of the carrots & canned corn. Partially cooked the veggies in the microwave first. Dotted the top of the potatoes with a little butter. Baked til hot & bubbly. I will add a little cheese next time, just to try it. Loved this recipe!

Slow Cooker Chicken Taco Soup

Reviewed: Feb. 3, 2012
We loved this soup! I made some modifications simply because I didn't want to go to the store.i used boneless, skinless chicken thighs and chicken broth instead of the beer. Didn't have chili beans, so I left that out. Used the Bill Echols taco seasoning, omitting the salt, as I don't usually add salt when using the canned goods. Very tasty! The chicken just fell apart after cooking all day.

Delicious and Easy Mock Risotto

Reviewed: Jan. 24, 2012
I used butter & olive oil combo, then toasted the orzo in the pan for a few minutes. Then I started adding broth and added my garlic & onions. One the orzo was cooked, I tossed some fresh spinach in to wilt. I sprinkled some asiago cheese on just before serving. Delicious side dish for my grilled chicken.

Make Ahead Lunch Wraps

Reviewed: Aug. 28, 2011
I made modifications based on what I had on hand so I didn't have to go to the store. I used 1 can Del Monte zesty chili style diced tomatoes, 1 can black beans, 1/2 lb frozen corn, taco seasoned shredded cheese, 8 in tortillas & Minute Rice brown rice for four servings. I got 18 nice little burritos that are delicious. I kept the rice separate from the rest. I used 2-3 tbsp rice, 2-3 tbsp corn mixture & 2 tbsp cheese for each. This amount of ingredients worked perfectly...I didn't have any leftover rice or corn mixture.

Carla's Fruit Dip

Reviewed: Jul. 24, 2011
I love that this can be whipped up so quickly. I served with chunks of fresh pineapple. You could add a little OJ concentrate too, to change it up, but it's delicious as is. I did use the whole 8oz cream cheese cuz thats what I had at home and didn't want to leave 5oz unused.

Slow Cooker Texas Pulled Pork

Reviewed: Jul. 10, 2011
This really is the BEST slow cooker pulled pork recipe EVER! I used Sweet Baby Ray's BBQ sauce & Gouldens mustard in place of the yellow mustard. I left out the thyme because my husband despises thyme. I used a bone-in pork shoulder. The meat was so tender & tasty. Thanks for this great recipe!

Czech Roast Pork

Reviewed: Apr. 16, 2011
Loved this recipe. I used a 2 pound sirloin pork roast, since that's what I already had at home. I used a whole bottle of Harvest Moon beer & added carrots to the pot. I used Gouldens mustard. This was moist & delicious. I was very pleased with how the flavors blended. We spooned some of the juices over the meat rather than making gravy. The carrots & onions, after simmering in beer were really good too. Served it with cabbage & noodles & fresh baked rye bread.

Super Easy Artichoke Dip

Reviewed: Jan. 8, 2011
Delicious! I used fresh grated asiago cheese in place of the parmesan because I like that better and that's what I had at home. Sprinkled a little sweet paprika on top before putting it in the oveen, just to give it a little color. Nice and easy. I mixed the ingredients the night before we had company over and put it in the oven shortly before our friends arrived so it was easy to just pull out and serve.

Baked Mashed Potatoes

Reviewed: Jan. 8, 2011
I LOVED these potatoes! I was a little skeptical at first but, they were so fluffy and delicious. I added dried garlic and onion seasonings. I was able to make them a couple hours in advance of when I needed them and just left them in a low temperature oven until we were ready to eat them.

Pineapple Glaze for Ham

I made this for my family for Christmas and it was very delicious. It was very easy too. I did add some of the maraschino cherry juice to the reserved pineapple juice. Will definitely make this again.

Una's Cheddar Beer Bread (bread machine dough cycle)

Reviewed: Oct. 23, 2010
It was very tender. I didn't use cheese because my husband doesn't like cheese. A friend had made this without the cheese because she missed the signal on her bread machine and she said it was good without the cheese. I added extra garlic and used regular budweiser beer. It didn't really have any flavor, except spiciness from the ground red pepper and black pepper. Probably won't make again.
