Chicken Enchiladas II

Easy, good, fast to prepare. Added a few things to tweak this like a bit of oregano and garlic cloves some jalapeno salt and a few fresh mushrooms sauteed with the green onion.

Sweet Mustard Chicken Bake

Easy, good, did not require so many ingredients that I had to make an extra trip to the store. I just altered the recipe slightly by adding a few more spices like garlic and curry. Tasty and the whole family enjoyed this dish.

Easy Spicy Chicken and Rice

Great and easy. I made some of the adjustments suggested by other reviewers, nothing drastic just some spices, doubled the rice, tomatoes and green chilies and a can of cream of mushroom along with the cream of chicken. Melted Monterey Jack on top. Great will definitely make this again. Thanks!!

Chocolate Cookie Buttercream Frosting

So easy, required few ingredients and was the perfect balance between creamy and stiff. Will definitely use again. Thought it was great. Appreciated the absence of shortening as I think it leaves a film on the roof of one's mouth!! Very great submission

Cream Filled Cupcakes

I hardly ever bake from scratch but this was easy and straight forward so I decided to give it a try. I used another recipe on the site for chocolate buttercream frosting and I omitted the creamy filling. Moist, delicious, a new family favorite. I ate way too many myself though!! Will definitely make again.

Citrus Tilapia

Fantastic and easy. I served it with steamed rice, and washed sweet bell peppers and placed them directly on the gas burner to blister them. My husband and I thought it was delicious and was a super fast dinner. Will definitely make this one again.

Asian Style Meatloaf

I enjoyed the change and combination of unusual ingredients. My husband thought it was so gross that he refused to eat more than 1 piece and would not refrigerate the remaining portions. We fed it to the neighbor's dog. Will not be making this one again.

Cabbage Jambalaya

Thought this was great with a few modifications. I had the ground beef frozen so I had to add almost 2 lbs rather than what the recipe called for. Also added a couple of extra stalks of celery. Additionally I substituted 2 approx 15 oz cans of chicken broth and 1 can full of water. Also, I added about 6 cloves of garlic minced, red ground pepper, black coarsely ground pepper, garlic salt, and 3 bay leaves which I removed prior to serving. I substituted 1 can of Rotel and 1 can of diced stewed tomatoes (seasoned with basil, oregano and garlic). While it may seem overly modified I found it delicious and flavorful as did my DH and picky kiddos. Enjoy

Pork Tenderloin with Mustard Sauce

I thought this was outstanding. I loved the flavor of the marinate combined with the mustard and dill in the sauce. Outstanding flavor, juicy and tender. I plan to share this recipe with my extended family.
