Slow Cooker Pulled Pork

First I must say it is oh so very simple and delish! I agree with reviews saying that pork loin is not the best choice. Butt or shoulder is great. I have made this recipe several times (10-15!) as my large family loves pulled pork sandwiches. A few drops of liquid smoke added to a full liter of rootbeer gives us our favorite flavor. (If you use liquid smoke, be careful not to over do it. You do not need very much! ) Changing the BBQ sauce can give you a slightly different flavor each time. We love heat in our family so homemade spicy sauce is our preference although this recipe still is wonderful even with your bargain BBQ sauce. Yummy yummy yummy. Enjoy!

Quinoa and Black Beans

I made this recipe twice. First as written, second, with a few changes. I used only one can of black beans the second time as two cans made the bean taste too overwhelming. I also added additional garlic and used tomato based chicken bullion. The family thought recipe as it was written was just okay. The second version received rave reviews! This recipe is a great basic starting point to tweak according to the specific tastes of your family.

Roasted Beet and Potato Soup

Amazingly simple and delicious! I made a double batch then added an extra cup each of beets and potatoes as I wanted to use up what I had. Served eight happy campers for dinner. What a great way to incorporate beets into a meal! This is a fabulous starter soup that can be tweaked in so many ways. Glad I found it!

Mexican Beans

You know this is a great recipe when my girlfriend from southern Mexico asks for the recipe. We love heat so the only real change was to add more peppers. I have made this several times and have seasoned around the style of meal I was planning. This is a big reason why these beans deserve 5 stars. This recipe lends itself perfectly to adaptations. ( Imade it exactly to recipe specs the first time which was well received by my family of 7)

Pork Carnitas

I rate recipes based on the basic "bones" of the recipe. If I change quantity of seasonings to adjust for our preferences (we love heat!) without changing any major steps I still believe that I can fairly rate the result. That said, I added additional spices and one jalapeno with seeds to the liquid. I made a double batch hoping to have leftover meat for a second meal later. Wrong! Kids ate up every last bit. My 90 year old Italian grandmother swears the answer to dry meat is to shred then add some olive oil to the mixture. It has worked for me in a pinch but wasn't needed here as the pork was succulent.

Asian Coconut Rice

I loved it. Family thought it was so so. I turned the leftover rice into hot cereal the next morning by adding cinnamon,nutmeg,butter and milk. Sweetened with agave. Kids loved it!

Apricot Chicken I

A long time family favorite! I have 5 kids which means there are often extra bodies at meal time. I have yet to find a kid who doesn't love this chicken. It is a great starter recipe for kids as they begin cooking as well.

Mexican Street Vendor Style Corn Salad

Just finished dinner with absolute raves about the corn. Cotija cheese also known as Queso Cotija or El Queso Cotija ,can be found at Winco and Raleys in my area. Delicious and oh so simple. My kids ate it up then licked the pot after! Its a perfect compliment to any Mexican dinner.

Cilantro-Lime Dressing

Wow. I tried hard to resist eating by the spoonful! This is a recipe that can truly be altered according to your preference and still come out amazing. Due to allergies, we substitute agave for the honey. I made this dressing for a Mexican themed birthday dinner for our teenage son. All 10 teens present ate up their salad and some asked for seconds. (even the non salad eaters!) I added a bit extra garlic and used up the remaining cilantro that I had on hand (1/2 C packed) I also used a full teaspoon of fresh ginger. We used the remaining dressing to marinate chicken tenders which were outstanding. It's important to note that the first time I made this dressing I followed the instructions to a "T" except for the honey substitution. It is delicious either way! I want to add that I agree with the reviews about it being sweet. If you use too much it can be overbearing. A little goes a long way!

Eggplant Parmesan with Fresh Basil and Smoked Mozzarella

wow! This is a delicious recipe. The smoked mozzarella is excellent and will be a permanent substitution for plain mozzarella in future Eggplant Parmesan dishes. I come from a long line of Italian cooks who are known for this dish. That said, I was happy to find a recipe that deviated from the usual way we make it. I am a basil fan so I did add extra basil. My Nonie insists that you must dip in flour first before the egg and bread crumbs. Since I have grown up with that step , I do it automatically now. Not sure if it even makes a difference! Just when I thought I couldn't improve on the family recipe, I did! We make our own sauces and freeze for future use. I chose the caramelized onion and red bell pepper sauce which went great. Next time I am making a double batch! Oh thank you for this jewel of a recipe!

Tasty Fried Eggplant Balls

After searching for a different way to serve eggplant to my big family I was happy to find this recipe. This is excellent as written but has turned into a great base recipe depending on what you are serving. I have changed the spices and cheese to make delicious veggie meatballs to compliment my red sauce. I have also made these with feta and Greek seasonings served in a pita pocket with Tzatziki sauce (recipe from this site) I agree that the balls should be kept small for best results. Patties work great too. What a fun flexible recipe!

Banana Crumb Muffins

My cousin and I were debating about who makes the best banana muffins. We cracked up when we realized we use the same recipe! We have nine kids between us and both of us think that this is a perfect recipe for them to learn to bake. The littlest ones love to mash bananas! Thank you oh thank you for this family favorite!

Lime Cilantro Rice

our whole family loves this rice. We are big cilantro people and find this to be the perfect compliment to a wide variety of dishes. One of our favorite twists on this recipe is to make it as a sticky rice using traditional Thai rice and following sticky rice instructions found on this site. Thank you!

Delectable Marinated Chicken

We had a crazy week and I ended up with chicken marinated for three days before grilling. It was amazing. I substituted sesame oil - about 1/8 tsp for the sesame seeds as I had none on hand. My husband told me to get rid of the other marinade recipes. Kids had seconds. Moms happy.

Greek Tzatziki

This is a great, easy sauce. The only changes I made was to reduce the salt to a teaspoon and increase to a whole cucumber. I followed the advice of reviewers and strained the yogurt. I strained nearly one cup of water out of the yogurt container! If you do not have cheese cloth, a thin dishtowel or good quality paper towel will work. I grated the cucumber and strained the water from it too. In the end it was a perfect texture and gobbled up quickly by the family. We used as a dip ans well as a sauce for falafel and pita sandwiches. This dip keeps getting better as the days go by.

Hawaiian Chicken Kabobs

Excellent! The sesame oil is a great touch. This was a fun meal on our camping trip and required no plates or silverware...Perfect! I made a double batch of marinade. One for veggies and one for meat. I used rice vinegar as I had no Sherry on hand. I added red and green bell peppers, zucchini, cherry tomatoes and onions to the pineapples. I skewered chicken separate from veggies . Everything came out so yummy - even the veggies quickly disappeared! Only three days after returning from our camping trip and all five of my kids are requesting this meal again. Love it when healthy food is so well received! Thanks for the great recipe. Serving again tonight!

Angela's Awesome Enchiladas

This recipe is perfect as written. That said, it is also very easy to adapt to what you have on hand. I have made this with both leftover shredded beef and pork, green enchilada sauce in place of red sauce, cream of celery or cream of mushroom soup in place of cream of chicken. All versions were equally well received in my big family! Thanks for the perfect go to recipe that works magic on leftovers.
