Salmon in Creamy Silk Sauce

Reviewed: Aug. 2, 2003
I used tin foil instead of parchment paper and lemon juice instead of lemon, since that is all I had. I used my spagetti pot (since it doesn't get much used when I am off the carbs) and used it like a steamer. The salmon was very tender and moist. All the herbs I used were dried. I thought it was very good, but next time I might consider adding some wine or something to the sauce, seems like it needs a little more flavor. I would say that I used more garlic and onion than was called for and just seemed a bit bland for my taste, but I would make this again

Mustard Dill Dressing

Reviewed: Aug. 2, 2003
I thought this was a very good recipe, a nice change from the ranch dressing that I have been making lately. I have to change dressings every so often because my husband gets bored with the same dressing all the time. I did change some things. I used balsamic vinegar and couldn't see opening a can of evaporated milk for just 2 tablespoons, so I used heavy cream (helps keep the carbs down since I used the balsamic vinegar)

Bev's Chocolate Pie

Reviewed: Dec. 13, 2002
I thought it was good. My mother and grandmother thought it was too sweet, but that is easily remedied. I'm not a big canned milk fan, so next time I think I would use cream and less sugar

Day Before Mashed Potatoes

Reviewed: Dec. 13, 2002
I made these for a family dinner. I thought they were good, but my husband remarked "Who made the potatoes, they are really good!" He fried up the leftovers the next day in butter and ate all of them

Ranch Dressing II

Reviewed: Oct. 15, 2002
I have made this a dozen times now, and will continue to make this. I have found homemade dressings to be so much better then the store bought (and I can name all the ingredients) that I have no interest in store bought anymore

Grandma Johnson's Scones

Reviewed: May 25, 2002
I knew I was going to alter this recipe before I ever started, and to took some suggestions from others. I added an extra 1/2c sugar, 1tsp cinnamon, 1/2tsp nutmeg, and 1tsp vanilla. I brushed the top with milk and sprinkled with cinnamon and sugar, and sliced almonds. I was looking for a stand alone scone (no jelly) and I found it, I will definetly make this again. Thanks

Buttermilk Pancakes II

Reviewed: Mar. 29, 2002
I just made these, so that I could try my maple syrup that took me two days to make a pint. I usually make hockey pucks when I try pancakes but these came out good. Its the thickest batter I have ever used. Way more batter than I could have ever hoped to use in one day or probably 2, there is just two of us. I didn't have buttermilk, so I substituted 2 cups sour cream (I had a 3lb tub I bought at Costco that I needed to get rid of). Will definitely keep this recipe.

Amazing Corn Cake

Reviewed: Mar. 29, 2002
I'm not crazy about raisins in a cake so I didn't use them. Thought the cake was alright. I put coconut in to disguise the corn, in case I got asked, but my husband saw the recipe, so he knew what was in it. The cake was good, not great. I ended up putting a cinnamon coffee frosting on it to give it some flavor.

Mohawk Milk Cake

This is the only cake that I have ever made to fall, but the flavor was good. Its a recipe that I would probably hang on to, because its a good recipe, just not awesome.

Aunt Bert's White Cake

Reviewed: Dec. 25, 2001
I had a recipe that I was doing that called for a white box mix (which I didn't have so I tried this one) and I changed a few things, changed buttermilk into sour cream (as per recipe that I was using this for) and I like mayonaise instead of oil, and used whole eggs because I didn't care what color it was (only two though). I liked it, would do it again, I did a it in 2 round pans and made four layers out of it with a cranberry/pineapple filling with a creamcheese frosting. Was great.
