No-Cream Pasta Primavera

This was delicious, and super simple to make! I had rotini on hand so I used that, parmesean cheeese instead of romano and then added one chicken breast - which I diced into small bites - and threw it in with the garlic, butter, and olive oil at the end. It gave the chicken an amazing infused flavor. I think next time I'll add a second chicken breast, because I didn't realize how much this recipe actually makes. I didn't have fresh green beans, so I just upped the asparagus. Next time I might also slice the grape tomatoes in half before roasting and up the balsamic to 4 tablespoons (love balsamic!). This is a fantastic, easy recipe that even I couldn't screw up with substitutions! Great way to get lots of veggies into your diet :)

Marcia's Company Casserole

My boyfriend has practically inhaled this cassarole. I like it, it's very rich, but one thing I would change is to saute the green pepper before adding it in. That's just a personal preference, I like my veggies to be hidden :).

Oven Baked Garlic and Parmesan Fries

These are very easy to make and tasty. They made the house smell delicious. One thing is that it makes A LOT of fries, so I would scale back the recipe. Seems like it made more than 4 servings.

Slow Cooker Buffalo Chicken Sandwiches

Too much buffalo flavor for me, kinda killed my tastebuds. If I make this again I will have to put the entire packet of ranch, instead of just half. Overall, though, this was not a homerun for me at all.

Baked Corn

Very good! I added another corn meal mix, because the consistancy was way too watery for me (didn't want to eat it with a spoon), I like my cornbread "bready", not pudding-like. If you can't add another mix then I would suggest DRAINING the corn.

Caramelized Onion and Horseradish Smashed Potatoes

These were very good. I cried the whole time (sooo many onions :), but I thought it was worth it. This makes a huge batch, so if it's just 2-4 of you then I would scale it back because we had a lot leftover. The horseradish gives it a very unique (in a good way) flavor and overally I really liked this kind of mashed potato. These were also very easy to make!

Apple Goat Cheese Bruschetta

So good! Added honey and that took it to the flavor I was looking for. Just drizzled a little over the top. My boyfriend thought this was OK, not great like me and my friend did. He thought there was too much of an herby taste, but we also didn't use fresh so maybe we'll cut back on the dried herbs next time. Overall, this is very easy and delicious, can't beat that!

Smothered Filet Mignon

Delicious! We used this on a couple of sirloin steaks and it was fantastic. I didn't have dijon mustard so I just mixed Hot and Sweet with Coarse Brown, turned out great! The onions are terrific! Add blue cheese a little at a time, because a little goes a long way on this steak! No leftovers, everyone cleaned their plates!

Reuben Sandwich II

Absolutely delicious and EASY! I am obsessed with Reuben Sandwiches, and this is better than anything I've ever paid for in a restaurant. One thing I'll do next time is melt butter and brush onto the bread...it's just hard to flip on the griddle when the butter is still in cold lumps :) That is ALL I am changing though! Kudos to Colette, this is wonderful!

Slow-Cooker Chicken Tortilla Soup

This couldn't be easier to make and couldn't be more delicious!!! I used green enchilada sauce and threw in frozen chicken breasts with all of the other ingredients before going to work...by the time I got home the house smelled great and the chicken was falling apart (SO easy to shred). We added some Tapatio sauce, chedder cheese, and then just crushed up some tortilla chips. We also made some buttered bread to soak up all the juice. This is beyond delicious, try it!!!!! Thank you for sharing this recipe :)

Peanut Butter Noodles

Wow, if I could give this 0 stars I would. This was literally a peanut butter sandwich with noodles instead of bread. The first few bites were alright, but after that it was down the drain. I didn't have chile paste, so I had to add a TON of hot sauce and red pepper flakes to try and tone down the peanut butter...still didn't work. I will not be making this again.

Poblano Chile Enchiladas a la Gringa

This is one of those "Don't Talk To Me I'm Eating" recipes! These are delicious!! I was originally going to add a jalapeno to the sauce, as other reviewers have recommended, because we like spicy food. I'm so glad that I tasted the sauce before I did this! It was very spicy already and after I added the chicken stock mixture it was absolutely perfect. When I put the sauce on the stove top I did have to add some seasoning salt, but that was about it. I didn't fry the tortillas, just threw them in the oven for 13 mins at 350F. I didn't have any onion, so I had to leave those out, but those would be a fantastic addition, can't wait to add them in next time. These are delicious, try them, you will not be sorry!!

Sweet, Sticky and Spicy Chicken

I have officially changed the name of this to "Party In My Mouth Chicken" YUM! I didn't even have enough soy sauce, but it was still amazing! I def had to add more hot sauce...we like it hot in Texas :) Serve over Jasmine Rice, you will not be disappointed!

Chicken and Red Wine Sauce

This was delish EVEN though I totally screwed it up...Note to all cooks: Splenda Brown Sugar DOES NOT measure the way regular brown sugar does lol! Even though it was crazy sweet, this was still easy and delicious. Serve over noodles and with a crusty bread to dip in the sauce, yum!! :)

Angie's Perfect Dinner Rolls

I was a bread-making virgin before attempting these rolls for Thanksgiving Day. My mother helped me...as I whisked she added in the flour...but other than that I did all the work. These were so easy! For the rising part, I just put them in the microwave so that it was dark and warm. I think my brother ate about 10 of them and he is the pickiest eater ever. The only thing I added was a nice eggwash (1 beaten egg and 2 tbls. water mixed) brushed on the rolls before baking for 12 mins. They came out beautifully golden brown.
