Banana Banana Bread

I agree with suggestions - added 1 tsp vanilla, 1 tsp cinnamon, 1/2 tsp nutmeg. I made 21 cupcakes - 325 degrees for between 25 and 30 minutes. I also added a crumble topping 1/3 cup brown sugar, 2 tbs flour, 1/8 tsp cinnamon, 1 tbs butter. I creamed sugar and butter, incorporated egg one at a time, stirred in vanilla, stirred in banana, flour mixture and walnuts. They are yummy!

Breakfast Prune Spice Cake

This is a slightly different version of a recipe that was passed down from my grandma. I use 2 9 inch round pans and ice with the following recipe: 4 tablespoons butter melted, 1/4 teaspoon lemon juice, juice from the stewed prunes, confectioners sugar and cinnamon to taste.

Black Bean Brownies

I have made this recipe twice. The first time as written and the second time with a few modifications: 1. substituted ground flax seed for the eggs, mixing 3 tablespoons of ground flax seed with 9 tablespoons of freshly brewed coffee. Therefore, eliminating the instant coffee. 2. increased the vanilla to 1 tablespoon. 3. added a handful of roasted pecans instead of chocolate chips 4. substituted splenda for sugar.

Flourless Peanut Butter Cookies

I have made this recipe as written and enjoyed it for its ingredients. To make it sugarless I made peanut butter by blending peanuts in my Vitamixer, substituted Splenda for sugar, added a Tbs of vanilla and substituted ground flax seed for the egg. Thank you Stephanie T.

Pumpkin Casserole/Souffle

After greasing my pan I lightly dusted with a 2:1 ratio of sugar and cinnamon. Additionally, I separated the eggs and folded in the beaten egg whites as a last step. Great recipe.

Butternut Squash Soup with a Kick

Sooooo good! I start by baking the squash in the oven. Saute onion, garlic,grated ginger and habanero(because I like the soup spicy)in coconut oil. Add cooked squash and all ingredients to the pot and smooth with the immersion blender. This soup is a staple in my home, thank you for the recipe!
