Stuffed Strawberries

I've made this recipe twice already and I love it - So easy and SO YUMMY! I didn't have the liqueur, so I used about a teaspoon of vanilla. Also, I used Neufchatel (reduced fat cream cheese) instead of full fat cream cheese. The first time I made these, I didn't have a piping bag, so I cut the corner off of a zip-lock bag and it worked well enough, but the piping bag definitely worked better.

Apple Crisp II

Per others' suggestions, I cut the water in half, and added 1/4 tsp. nutmeg to the sugar/cinnamon mixture. FANTASTIC and easy!

Slow Cooker Beef Stroganoff I

I've made this a few times and really enjoy it (It's painfully easy and a great cold-day dinner!). I'd rate this 5 stars with the folling adjustments: I add 1- 8oz package of sliced white mushrooms; 1-large sweet onion, sliced; I use 98% fat free cream of mushroom soup instead of golden mushroom to be health conscious. Per others' suggestions, I added the 1/2 packet French onion soup mix, and it made a BIG difference!

Hot Milk Sponge Cake I

I made this recipe as a part of an attempt to replicate a cake made at a local Italian bakery - A light, fluffy cake with fresh strawberry, peach, and whipped cream filling, and frosted with a not-sickly-sweet frosting (I used homemade whipped cream). I doubled the recipe to have enough to make two layers about 1 1/2 - 2 inches thick. While this cake was tasty, it did not quite fulfill my "light and fluffy" hopes. If I were to make this again, I think think I would separate the eggs from the yolks and maybe add a little lemon zest for a "brighter" flavor. Also, this cake took about 40 minutes to bake in a convection oven.

Greek Pasta Salad I

This salad was AWESOME! Next time, I would take other's suggestions and cut down on the vinegar some. I added 1/4 cup or so of red onion, as well as some cucumber to the salad, skipped the mushrooms and pepperoni. I will definately make again!

Fiery Fish Tacos with Crunchy Corn Salsa

This recipe is AMAZING! The crunchy salsa is PERFECT! I sometimes add a little more lime juice, and per the suggestions of others use red peppers and black beans instead of jimaca. Absolutely delicious and SUPER easy!

Apple Strudel Muffins

As the recipe is written, the muffins turned out unfortunately dry. Next time I would add more apples and season them with cinnamon and sugar and put in 1/2 butter 1/2 applesauce.

Lemon Pie Bars

The taste of these was wonderful - just what I was hoping for. A word of advice though - when making the crust, next time I might put waxed paper to line the pan, or just grease the bottom of the pan because it was difficult to get the first few squares out. It worked out for me because my husband and I enjoyed the less-than-perfect looking squares, while we gave the others to my parents for Easter. Will definitely be making again!
