Savory Cheddar Zucchini Muffins

These are very yummy. They need to be served hot from the oven, not as good reheated the next day. Perfect for brunch.

Whit's Chicken Enchiladas

Mmmm! Very yummy, decadent and easy. I sprinkled some black pepper in the chicken mix and pour enchilada sauce on top of half of the pan.

Shepherd's Pie

This has become my husband's favorite. I didn't have cream of celery soup so I substituted a can of cheddar cheese soup. Blows the calorie count but isn't that what comfort food is all about?

Butternut Squash Soup

Fantastic! I made this for Thanksgiving and people were practically licking their bowls - even the one who claims to hate squash. I also roasted the squash and used 1 pkg of neufchatel cream cheese.
