Black Bean and Salsa Soup

This was good. First it was simple and all the ingredients are on hand. I did saute onions and garlic in olive oil and add to the blender. I too left the second can of black beans out of the blender. We serve with sour cream,shredded cheddar cheese and crumbled tortilla chips. i

Jamie's Cranberry Spinach Salad

This salad is fabulous. I have made it twice this year, Thanksgiving and Christmas to two different crowds. It gets rave reviews. Its so simple and I usually have all the ingredients. How often do you get compliments on a green salad? You will with this recipe.

Mexican-Style Goulash

This was very good. I to made some changes. I didn't have Rotel so I used diced tomatoes and a can of diced chilies. I used taco seasoning since it had all the spices in one. I added more pasta and liquid made up from putting water in the tomato sauce can and the liquid from the canned corn. We like beans so I added a can of rinsed black beans. Topped off with a dollop of sour cream.

Pork Chops with Sour Cream and Mushroom Sauce

I too saute onions in a little olive oil and butter first, then added the chops to brown on both sides. I added about a 1/4 cup of dry white wine to the sauce. It does make a lot of gravy . I will try a little less sour cream next time. Family still liked it.

Philly Cheesesteak Sandwich with Garlic Mayo

This is good. I made some changes. I used flank steak that we grilled to medium rare. Let it rest. I cooked red and yellow bell peppers, onions, sliced mushrooms, 1 tsp of dried rosemary and a few splashes of Worcestershire sauce in olive oil on high heat until caramelized. I cut the flank steak against the grain into slim slices. I took several pieces of steak and made a pile of steak topped with Swiss cheese on a cookie sheet under the broiler until melted. I spread the garlic mayo onto naan bread, with the steak, grilled veges and some A-1. Delicious!

Annie's Fruit Salsa and Cinnamon Chips

WOW, I brought this to a family reunion and it was a hit. I agree that this needs to look like salsa and not a fruit salad. My Cuisinart on pulse did really well. I did add whole blueberries at serving time. I used strawberries, raspberries,grannie smith apples,nectarines, apricot pineapple preserve and half of the sugar. The chips must be used with this. They are delicious.

Big Al's K.C. Bar-B-Q Sauce

WOW! This is the best sauce. I used it with pulled pork. My husband loved it. I used apple cider vinegar because that was all I had. Other than that it was amazing.

This was alright. I think it needed more lime juice and less oregano. I think next time I will add cilantro and use less red wine vinegar or no sugar. I will try it again with some changes. We added slices of avocados as well.

Quick and Easy Monkey Bread

Pocket Bread

I learned how to make pocket bread when I married my husband. His father's family was from Lebanon. The dough is basically the same although they put sugar in the dough. When we make bread a 10 pound bag of flour is used and we make about 150 loaves. I notice that people are having difficulty with the pockets forming. We divide the dough into balls , cover and let rise again. We then roll on a floured board (using cracked wheat) pretty thin. Using this method you should have very few fail to rise.
