Yummy Honey Mustard Dipping Sauce

Tossed this together last minute for a dip for chicken fingers. I didn't have lemon juice, but it was still awesome! What a great surprise discovery :)

Whole Wheat Pasta

Great whole wheat pasta recipe! I mixed mine in my stand mixer with a dough hook and rolled it with pasta roller attachments and it was very easy. I have made pasta by hand before, but the rolling is very tedious because the dough is so elastic... you can mix the dough by hand but at least need a hand crank machine (for your sanity) to do the rolling I think. As other reviewers stated, there did not seem to be enough moisture in the recipe. Adding one more egg and ~1 tbsp of water helped it come together into a smooth, elastic dough.

Broccoli Cheese Cornbread

This was a great recipe! I followed one reviewer's suggestion of making your own self-rising cornmeal (1 cup flour (I used half whole wheat), 1 cup cornmeal, 1 T baking powder, 1 t salt). Measured on my kitchen scale, this only made 1/2 cup too much... I guess you could easily just cut the flour and cornmeal by 1/4 cup each :) I did use the butter, but used it to saute the onions until they were tender to give them a sweeter flavour. I also sauteed my broccoli for a few minutes to tenderize it because I used fresh broccoli. My husband I loved them! My picky toddler dipped a few bites in ketchup lol... at least some got in I guess :) I should mention... I was feeling lazy so I made 16 muffins lined with paper cups instead of using a pan. I baked them at 400degF for only 20 minutes.

Kris' Amazing Shredded Mexican Beef

I don't have much basis for comparison, but this was a pretty good recipe. I halved the recipe (spices included) and it has just the right amount of heat for me. The only modifications I made to the recipe were to add a sliced green pepper while cooking because I don't like my meat to be too dense and adding the juice of 1/4 lemon at the end. We ate ours on flat bread with guacamole, cheese and salsa and a side of spanish rice.
