Baked Kale Chips

NOM. I borrowed a trick from another recipe and used a bag to shake the kale in the olive oil. In addition to Vegesal (salt-type-thingy) I used some garlic and parsley granules (from the Latino section of the grocery store) and it was fantastic.

Turkey and Quinoa Meatloaf

AWESOME. This is the first meatloaf I ever made and I loved it. Husband complained it was not the right color for meatloaf, there's no pleasing some people. I used less sugar and less hot sauce than suggested, and next time I think I will add more garlic and salt, and add some herbs. Would love to try cheese as well.

The Best Meatballs

I made this with ground turkey, and only had regular breadcrumbs available. I had to edit my previous review as I just realized had the proportions wrong last time. It actually had good flavor with twice the seasonings, but consistency was terrible with half the meat. ;-) Now that I've got it right, this is definitely replacing my usual meatball recipe.

Grandma's Sloppy Joes

I made this with ground turkey, I loved how it easy it was. I added garlic because I was short on onion, and left out the cloves since I have none. I also went easy on the green pepper as my husband doesn't love them. I think the small amount I used was perfect. I hadn't had sloppy joes in about 30 years, but heard a report that my 2-year old liked them. Unfortunately he's fickle and didn't touch it, but my husband and I thought it was pretty good. I might try all spice and maybe leave out the sugar next time.

Parmesan Chicken

Nice and simple and tasty and fast. I rarely have time for prep or baking, so I'll definitely make this again. I think next time I'll adding some salt and pepper or other spices to the breading mix as it was a bit bland.

I changed the recipe a bit, omitting jalapenos because I don't like them and putting in dried ginger because I mistook it for mustard (oops!), and fried it on the stove. I quite liked the results.

Easy Salmon Cakes

I love this recipe! The flavor was subtle (but good), and it definitely benefits from a sauce or dressing (I used a curried yogurt, and some lemon-basil dressing.) I found that the non-salmon ingredients got all clumped up before mixing the salmon in, so next time I'll mix the dry ingredients, then add the salmon and eggs last so it gets distributed better. Also, I added a lot more oil to the butter for frying it.

Fast and Friendly Meatballs

This recipe is great and SIMPLE. (Used 94% fat-free turkey which was fine.) I added some chopped onions, and next time I would probably put even more stuff like maybe parmesan cheese, garlic, black pepper, etc. to give it more flavor. Also, they were already stuff to the pan at 15 minutes so I might turn them sooner, or just giggle the tray to keep them loose. I'll definitely be making this again. Thanks.

Easy Lasagna II

This was my first lasagna and it came out great. I used turkey instead of beef, although this could easily be a vegetarian dish as well. I layered spinach between the cheese & the sauce. I also used ricotta instead of cottage cheese, and fresh parsley because we had some laying around.

Chole Saag

This was so easy to make and really yummy. I used fresh spinach, vegetarian stock, and a little ginger. Omitted the peas. I should have waited to the add the yogurt until the end so it wouldn't curdle as much. I also threw in some soy sauce and some sriracha instead of red pepper flakes. We ate it over yesterday's leftover brown rice. I will definitely make this again.

Viva Italia! Classic Pesto

Perfect standard pesto. It's kind of thick so add some reserved water from cooking pasta. I had trouble getting everything to blend, but I think that's just my cheap blender.

Vegan Curried Rice

This was delicious and easy! The only things I changed was double the amount of water for the rice (what kind of rice are you using?), used hot sauce and cayenne pepper in lieu of chili powder, and doubled the garlic because that's how I roll. I served it with an ad hoc chick pea & tomato dish.

Cholay (Curried Chickpeas)

This was delicious! For Indian food, it was relatively simple, too. I basically skipped step 2, putting everything together in step 3. This way the spices got more into everything insted of just part of it. I agree with the suggestions to lower the chickpea-to-vegetables ratio, next time I will use the whole amount of onions suggested and even more tomatoes. Thanks for the recipe, I will definitely make this again.
