Healthy Creamy Mac and Cheese

Made it with half the cauliflower and no cayenne as I was hoping to ease my picky 5-year-old into eating it. He said he liked it, but didn't eat as much as he would of boxed mac & cheese. The yogurt sort of curdled, so it wasn't creamy at all, but I thought it was delicious. If I make it again I will try: - Not cooking the cauliflower in advance. Baking should be enough. - Slightly less yeast. (Although I love nutritional yeast, the flavor was more upfront than I want.) - Add cayenne, black pepper, or maybe even hot sauce during the prep. - More garlic and maybe onion flakes, too. - Some egg whites to help it congeal and add more protein. - Maybe some cottage cheese. - Top with a layer of cheese and less breadcrumbs.

Simple Turkey Chili

Fantastic and actually simple. I only made minor changes to suit my taste: half as much liquid, chicken broth (Better Than Bouillon) instead of water, more garlic, and no cayenne in hopes that my 5-year-old would eat it (he didn't). I'm hanging on to this recipe and will definitely make it again.

Chocolate Protein Balls

I use almond butter and semi-sweet chocolate chips. I only put in a couple tablespoons of honey. One thing that helped a ton was wetting my hands when forming the balls.

Yum! I used fresh tomatoes and semi-hot peppers from yum garden. Next time I might try easing up on the broth (adding water) and adding some other veggies.

This is SO good. My picky husband and 4-year-old son both love it. Other commenters are correct about the recipe making way more breading than needed, but that's easy to adjust.

Grilled Turkey Reuben Sandwiches

Good recipe. I skipped the microwaving but will probably do it next time for more of the warm effect. I mixed up some mayo and ketchup in a bowl to make the Thousand Island.

Easier Turkey and Quinoa Meatloaf

AWESOME. This is the first meatloaf I ever made and I loved it. Husband complained it was not the right color for meatloaf, there's no pleasing some people. I used less sugar and less hot sauce than suggested, and next time I think I will add more garlic and salt, and add some herbs. Would love to try cheese as well.

I made this with ground turkey, I loved how it easy it was. I added garlic because I was short on onion, and left out the cloves since I have none. I also went easy on the green pepper as my husband doesn't love them. I think the small amount I used was perfect. I hadn't had sloppy joes in about 30 years, but heard a report that my 2-year old liked them. Unfortunately he's fickle and didn't touch it, but my husband and I thought it was pretty good. I might try all spice and maybe leave out the sugar next time.

Glo's Sausage Fried Rice

This was fantastic. My partner and I both loved it and we have very different tastes. Things I changed: I skipped the peas, I used turkey sausage crumbles, and used a "red" rice that I had leftover. Next time I might try sautéing some garlic along with the cabbage at the beginning, chopping the carrots smaller (or leaving them out), and maybe making the sausage a little spicier with black or cayenne pepper. We will definitely be making this again.

Baked Kale Chips

NOM. I borrowed a trick from another recipe and used a bag to shake the kale in the olive oil. In addition to Vegesal (salt-type-thingy) I used some garlic and parsley granules (from the Latino section of the grocery store) and it was fantastic.
