Pumpkin Cheesecake in a Gingersnap Crust

Cherry Coffee Cake

Very tender, moist cake. I made it in a 9 inch glass cake pan, perfectly done in 1 hr. I used organic coconut oil (it was a gift, never used, saw it in another cherry recipe) and subbed half the white sugar for brown. I did the glaze, but a streusel topping would probably make this 5 stars. Yes, I'll make it again, and probably add streusel topping.

Stuffed Shells III

Excellent! Several of the reviews were very helpful. I used my own sauce, and covered the dish with foil until the last 15 minutes, at which time I put slices of fresh mozzerella on top. People who said it was too dry were mostly folks who left out the mushrooms- they add moisture to the recipe, and I kept them in. I did not put cheese in the sauce, but did add 1/2 lb sweet Italian sausage meat. Also, putting the ricotta mixture in the fridge for an hour or so did make it easier to work with. Good recipes, good reviews, this is why I always come back to Allrecipes.com!

Fool-proof! Light, fluffy, you have to keep the lid on to keep them from floating away! Seriosly, my husband said these were the best!

Irish Pound Cake

Oh my, sooooo good! I made a glaze with confectioners sugar, vanilla extract- and more Irish whiskey! Err, don't make the mistake I did and put it in a bundt pan. It almost overflowed!

German Apple Pancake

Terrific recipe, easy to make. We used to get something like this at a restaurant chain, but my husband says mine is better, lighter. Make sure you get the butter up the sides.

Glazed Almond Bundt Cake

Great cake! I baked it for 60 min, maybe could have done 55. I made my own glaze with just confectioners sugar, a little milk, and more almond extract. No problem with ground almonds- Trader Joes sells ground almonds along with all the other nuts, etc.

Lemon Square Bars

Excellent recipe as it is. (I had no trouble using melted butter.) It does kick it up a notch if you put fresh lemon zest in the crust. Wait until after you cut the bars to sprinkle a bit of confectioners sugar on top- it makes them look more tidy and sexy!

Chocolate Cornstarch Pudding

This was soooooooooogood! I used 1% milk and added a bit more cocoa powder. It came out perfectly! I poured it into small disposable containers with covers so I could pop one in my lunch bag- way better than the packaged stuff, and cheaper too!

Crab Brunch Casserole

A new Lenten favorite! Used Gruyere instead of cheddar, fresh, chopped onion , and some old stale Italian bread instead of croutons, seasoned with a bit of melted butter and Old Bay. I had reduced a bit of the liquid (used 1% milk and FF half&half), next time I'll make it just a bit wetter. I, too, used 4 eggs. Oh, and shook some Frank's Hot Sauce on it when I served it. This was a HUGE succes with my husband, he wants the leftovers for breakfast tomorrow!
