Almond-Topped Fish

Wow, this was great! Even someone who doesn't much care for fish would probably eat this dish. I did not make any changes except I used a local type of white flaky fish (cod nor haddock were available here). I think it would be good with any type of flaky fish. I served it with sauteed swiss chard and carrot rice, and it was wonderful. This will be going into our regular rotation. Thanks for sharing.

Chicken, Fennel and Mushroom Soup

Wonderful rich soup. Only changes I make are to sear the chicken in oil and about 4 cloves minced garlic, and to double the water/chicken stock because we all love the broth. Healthy, hearty, and delicious. I've never served this to anyone who has not asked for the recipe. Thanks so much for posting it.

Tomato-Dill Shrimp Stew

Fabulous - this is our favorite shrimp dish, now. I find canned tomatoes work well in it, and save a bit of time.

Traditional Chicken Keleguin

Wow, yum! I used a rotisserie chicken from the store, and substituted 1 small clementine orange for one of the lemons, and put the pepper flakes on the table so that all could season to taste. I chilled the chicken/coconut mix, heated fresh baked tortillas from the deli in the oven, and served both with a pineapple yogurt sauce (crushed canned pineapple mixed into plain whole milk yogurt). My husband and I loved it - thanks - we will put this one into regular rotation.
