Fruit Cobbler from Mott's®

Very good for how easy it was! I used peaches and pears in juice, and unsweetened applesauce. I liked it, but it wasn't very sweet- we thought it would be a little better if the peaches were in light syrup instead. I also reduced the applesauce in the filling to about 3/4 of what the recipe stated, just going by the look of the filling as I mixed it. Great recipe!!

Killer Pumpkin Pie

Great Pie! Made because of multiple food allergies in my kids, but my husband and mother in law (who are big pumpkin pie lovers and do not typically eat dairy substitutes) also thought it was delicious!

Quinoa Pilaf

Chicken Chimi in the Oven

Great recipe! I used only 1 Tbsp chili powder, and 1 1/2 C salsa. That was plenty of chili flavor for us! I made the Rush Hour Refried Beans on this site, and shredded leftover baked chicken. My mixture filled 7 fajita size flour tortillas, which fit perfectly in a 9x13 pan. Brushed canola oil all over, and they browned very nicely in about 20 min! Served with guac, very tasty, although they would definitely be amazing with cheese melted on top too!

Rush Hour Refried Beans

Good, and easy to make! Followed advice of other reviewers and drained the beans before mashing, then added bean liquid back into them to get desired consistency. I also used Earth Balance butter in place of bacon grease.

Chocolate Chip Bread I

Very good! I made it with soy milk due to a dairy allergy and it still turned out great! I used the sweet bread setting on my Oster bread machine and put the chips in when it beeped, and they pretty much stayed in chip form. However, I think I may use raisins instead of chocolate chips next time, just personal preference. If you like chocolate chip muffins, pancakes, etc, you'll like this bread!

Marinated Baked Pork Chops

Easy, tasty recipe! I wasn't blown away by the flavor, but it was good! I omitted the worcestershire sauce (fish allergy), and doubled the sauce ingredients, and instead of doubling the oil used a "single" amt of oil and the same amount of rice vinegar. I put half to 2/3 of the sauce on top of the chops in their baking dish, let sit in the fridge for a couple hours before cooking. After cooking covered ~20 min, I scooped out the sauce/liquid in the pan and topped with the remaining sauce, and cooked uncovered another 10 min or so. They were very good! I think I will marinade in a bag next time though, to get the marinade all around the chops instead of just the top.

Great recipe! I did follow others' suggestions and drain the pineapple, as well as omit the white sugar. It was plenty sweet enough with just the brown sugar!

Black Bean and Corn Quesadillas

These were great!! I omitted the red pepper flakes (salsa was enough spice), and baked/toasted the quesadillas in the toaster oven. We topped with guac, sour cream, and more salsa. Delicious!!

Butternut Squash Soup II

Great Soup! However I did follow suggestions from other reviews and omitted the potato and cooked the squash whole in the oven before peeling and mashing it for the soup (so much easier than cutting a raw squash!!). I also added 1/2 tsp curry powder, 1/4 tsp cinnamon, a dash of nutmeg, and 1-2 cloves garlic to the sauteeing veggies before adding the stock and then the squash. Finally, I don't have a full size blender so I just mashed the squash and added it to the soup and we still liked it! Definitely not a "creamy" texture if that's what you want, but still very tasty!

Kielbasa Made Easy

It was ok, I think this recipe depends largely on the type of barbeque sauce you use. We used sweet baby ray's Honey BBQ sauce and 1/2 the amount of cranberries, and it was good, but not amazing. Also, I served it with rice for a normal dinner, and even with the same flavors it might have been better as a "toothpick" party appetizer (which is what it's designed for!)

Spaghetti Squash I

This was pretty good, and a great recipe if you've never cooked spaghetti squash (which I hadn't!). As one reviewer suggested, I cooked the squash cut side down in a glass pan with water in it for about 30 min. I omitted the feta cheese and olives and instead put in green peppers and spinach. Also used a can of fire-roasted tomatoes instead of fresh tomatoes. We added crushed red pepper and parm cheese at the table and these extra flavors made it great! I think next time I'll add some crushed red pepper to the oil to get the heat in the dish instead of adding it afterwards. Thanks for this recipe!

Sauteed Apples

Great! I substituted Earth Balance for butter and reduced the sugar (admittedly, I didn't measure, but it was less than 1/2 C). Used mix of whatever apples I had. It was delicious! We ate it as a pancake topping.

Cranberry Chicken II

Amazing chicken recipe!! I used 4 chicken thighs (bone-in) and halved the sauce recipe and it was still more than enough sauce. I baked at 350, covered, and the chicken was done after about 40-45 min. We all loved it and ate it with stuffing... it had the flavors of thanksgiving without all the prep work!! Will definitely make again!

Easy Lemon Cookies

Great, easy cookie! Made with Ener-G egg replacer because of my son's egg allergy, and they turned out great! I did have to cook for about 12 min, I did 9 min at 375 F and a last few minutes at 350 because it seemed like the bottoms were getting pretty brown.
