Beth's Spicy Oatmeal Raisin Cookies

Per other reviews, I also used all butter. I used equal parts whole wheat and white flour, and added a few tablespoons of ground flax seed just for kicks. These are great!

Tomato Zucchini Casserole

This was so good! My 4 year old gobbled it up. I used Zucc and Tomatoes from my garden. Did have an onion, so just put the bread crumbs on with butter. I used Colby Jack cheese since it was all I had. Next time I may try using less cheese to reduce the fat content, but it is delicious as is!

Jamie's Cranberry Spinach Salad

Good salad. Used fresh raspberries that I had on hand instead of cranberries. Omitted the poppy seeds since I didn't have any. My family loved this salad.

World's Best Lasagna

Made it ahead and kept in fridge overnight, so didn't have to simmer the sauce for so long. Also soaked noodles in hot water while I made the sauce, and it worked perfectly. Thanks for the suggestion!

This was unexpectedly good! I did exactly as the recipe said. Agree with other raters, it takes longer to bake than stated, and I'd add bacon to the mix too.

Black Bean and Corn Quesadillas

I used whole wheat tortillas. I also used frozen pinto beans and frozen corn to cut back on the BPA exposure from cans. Didn't have red pepper flakes, so used tiny amount of cayenne pepper. It was delicious! Served with lettuce, salsa, guac, sour cream.

Pan-Poached Alaskan Salmon Piccata

I am terrified of making any kind of fish, but this was easy and turned out great! I used chicken broth instead of water/bouillon and omitted the parsley since I didn't have it on hand. My 4 year old gobbled it up. I served this with the Green Beans with Almonds recipe. YUM!

Roasted Brussels Sprouts

This is a surprisingly easy and yummy way to make brussels sprouts. Let's be honest people, these still taste like a vegetable, but the simple preparation makes them quite bearable. I cut my brussels in half, because I can't handle an entire mouthful at once, and I thought that helped cut down the cook time. My 4 year old daughter would even eat them, as long as there was sufficient salt on her piece. :)

Mom's Zucchini Bread

I made this using 2 c all-purpose flour and 1 c whole wheat flour, 1 cup white sugar and 1 cup brown sugar, 1/2 cup apple sauce substituted for 1/2 cup oil, and 4 cups grated zucchini. It is GREAT! Perfect sweetness, and moist.

Grilled Zucchini Pizza

I wanted to keep it as simple as possible, so just brushed the zucchini with butter and broiled for a minute or so before topping with Classico pasta sauce (Florentine Spinach and Cheese), mozzarella, and pepperoni. Broiled again to melt the cheese. My 4 year old LOVED it, and me too! Now we have a non-dessert way to use our excessive garden zucchini.

Tasty Lentil Tacos

YUMMY! I followed the recipe exactly as stated, but we used whole wheat tortillas instead of taco shells. It was delicious, and my 3 year old gobbled it right up. The meat was not even missed!
