Basic Hummus

I made this as an appetizer for Thanksgiving. This was my first attempt at hummus and it came out pretty well. I didn't add all of the olive oil, trying to save some calories. I added probably 2-3 tablespoons of reserved liquid to get it to the right consistency. It tasted somewhat bland, so I added a little garlic salt and some rosemary seasoning blend. The end result was good. I served it with pita and bagel chips...yum!

Koula's Best Ever Chicken Gyros

This was great! A little different than traditional gyros, but the blend of spices made this dish delicious! The 3 chicken breasts I used were rather large, and the ratio of sauce to meat looked a little deficient, so I doubled the sauce recipe...this is definitely a "make-again" recipe in our house!

Zippy Egg Casserole

I made this casserole to serve at a brunch...I wanted something a little different. It was great! I didn't want it too spicy, so I decreased the amount of Pepper Jack cheese, but next time I will try it as the recipe suggests. Also good with bacon!

Apple-Raisin French Toast Casserole

I served this at a celebration brunch and there was nothing left! Several people asked for the recipe. I added a little nutmeg in with the apples and sprinkled a little cinnamon and nutmeg on the bread before putting it in the oven. It seemed a little moist after baking uncovered for 5 minutes, so I left it in for about 10 minutes and it was fine. I highly recommend this recipe!
