Great Blueberry Pie

Make your own crust - lots of good recipes here on Allrecipe. This isn't really a traditional "blueberry pie." It's more like a fresh fruit tart. It's delicious, but some fresh whipped cream is really needed.

Butternut Squash Soup

Took the common advice of baking the squash first. But the problem is this recipe has way too much cream cheese - might try with 1/2 next time.

Chicken Massaman Curry

Avocado and Tomato Salad

Fantastic and simple recipe. I'll note that 8oz of balsamic vinaigrette dressing is waayy too much. And since I have balsamic vinegar, I mixed my own dressing with about 2 tbs balsamic vinegar and 2 tbs extra virgin olive oil.

Corn with Roasted Chiles, Creme Fraiche & Cotija Cheese

Had a delicious roasted corn dish and the missus asked me to try it. I think I did a good job - passed her test. I'll have to remember to post a recipe for roasting peppers... basically put peppers in a 400F oven and keep an eye on them to roast them evenly. Take out and put in ziplock bag for 10 mins. Then you'll be able to peel off skin and remove seeds pretty easily. Wear surgical gloves the whole time and don't touch your face!

Seattle Fire Station 25 Meatloaf

Great recipe. Cut it in half and still had 2 good sized meatloafs. Thought it might be interesting to try this is 2 types of pans - the standard 13X9X2 baking dish worked fine. We'll see how the bread pan works ;) I did make a few changes (I know this annoys people - oh well). I didn't have pepper jack, so used blue cheese and it was fantastic. Also substituted cocktail sauce for 50% of the ketchup (would have used horseradish if I had it). I loved the little extra kick. I also forgot to buy "meatloaf seasoning" so had to look up what was in it - just as easy to list out the raw ingredients. Fantastic meatloaf - possibly best I have ever had. Addition of pistachios is great idea. Was a little afraid of the olives (I hate olives), but out of respect for the recipe I kept them in (although I did purée the olives).
