Best Buckwheat Pancakes

I had purchased some buckwheat flour at our local market and was looking for a recipe to use it. I stumbled across the recipe for pancakes however since it was Sunday morning and we wanted to have pancakes right away, I was a bit concerned that I would not be able to let the batter sit as has been recommended. I did take the advice of another person and reduce the baking soda to 1/2 tsp and add 1 tsp of baking powder. I never have buttermilk but just added 1 tbsp of lemon juice to the milk and let it sit for a few minutes before adding to the recipe. We really liked the results - the pancakes were as fluffy as my normal "white flour only" ones are and we enjoyed the flavour.

Roasted Swiss Chard with Feta

We have been looking for some flavourful lo-carb vegetables to add variety to our diet - we really enjoyed this one - wish I had read the other reviews before we made it because I think the addition of garlic would have added to an already great side dish. We served with pork chops (barbequed) and mashed cauliflower.

Pork Tenderloin Stew

I really enjoyed this recipe - only changes I made was to increase liquid (used chicken broth) and the therefore used a little more flour to thicken. I also used balsamic vinegar (only thing I had). Very good

Dark Chocolate Sauce

The only change that I made was to use diabetic brown sugar (my husband is diabetic) and it turned out great. We like it for hot chocolate
