Funnel Cakes I

Really good after I added a tsp of vanilla and 2 Tbls sugar to the batter. Sprinkled with powdered sugar and added some well-defrosted strawberries (with their juices & sugar) ...topped them off with Redi Whip! YUM! So, so filling...so make a light dinner if you're having these for dessert. The kids love to help with this one!! Thanks!

Banana Cake VI

I LOVE this banana cake and my husband begs me to make it! I took this to my daughter's school and they asked for the recipe. I always use milk with lemon juice to make my own buttermilk (substitutions in the back of Betty Crocker Cookbook) because I don't keep buttermilk on hand. This a such a moist and delicious cake, the bananas are not overpowering, and I like that. Thank you, Cindy, for sharing a "winner" with us!

Strawberry Glazed Pie

This made a nice glaze. It was perfect for a deep dish pie. I used about 6 cups of fresh sliced strawberries and mixed them in a bowl with the glaze. I mounded them high in my pie crust. It was the perfect amount. I was surprised that it did not taste like Jello. Was better than Marie Callendar's who's pie crusts usually taste freezer-burnt. Now I can make my own! thanks Karin! I have impressed many so far :)

Luscious Spinach Artichoke Dip

This is a good dip. My husband loved it. It is very rich and goes a long way. I would recommend having it with crisp baguette slices because the flavor goes nicely. Impressive for friends....

Chiles Rellenos Pie

I liked this but my husband and kids weren't crazy about it. I guess you have to really like chiles. Make sure not to use a big pan, my pan was too big and the eggs were a bit overdone. I think they tasted a lot better the next day.

Restaurant-Quality Maple Oatmeal Scones

I added dried apricots and apples instead. To me, these were just okay. I prefer Starbucks scones! This dough was really, really sticky and I thought they would have a more buttery taste. I didn't have maple flavoring, so I added extra vanilla. Maybe that had something to do with it. I decided to chill the dough after putting it together and I was able to handle it better, otherwise it stuck to my hands and was impossible to knead.

Bacon Olive Wraps

I made these for a party and everyone loved them. I thought they were okay. I think it is best not to stretch the bacon around and around the roll, or the inside of the bacon doesn't get cooked and the edges get burnt. But everyone loved them....

The Best Lemon Bars

This recipe was really quick and easy. I used fresh lemons from my tree and it was sooo good! It would make a good potluck treat. I sprinkled powdered sugar on top so they looked really yummy!
