Ground Turkey Casserole

This was a quick, simple recipe that turned out fabulous with a little tweaking! The ground turkey definitely needed seasonig. I added poultry seasoning, along with salt and pepper. Since I'm not a big fan of cream cheese, I only added like 2 Tbs, and limited the shredded cheese on top. It still tastes great without all that cheese, and is a lot less fattening. So nice to have a quick, great tasting go-to recipe as a single mom!

Baked Spaghetti I

Great taste! I used turkey ground, so needed more seasoning perhaps for that reason. I noticed the noodles on the bottom got dry though, so I think next time I'd mix everything together instead of layering, like someone else suggested.

Black Beans and Rice

I had the same problem as Ms. Scarlett, the reviewer below. The rice didn't cook in 20 minutes, and soaked up the amount of broth specified. I had to add at least twice as much broth and waited about 10 more minutes, and still the rice was a bit undercooked.

Really great tasting! Light, and not too mushy/cheesy or too sweet like some kugels. I didn't try the graham cracker topping, but opted for the crumbled corn flakes and brown sugar and butter topping someone else suggested, which I really liked. However, my corn flakes came out a little too hard for some reason. Instead of a topping, I think I might opt for adding raisins or pineapple chunks next time, as this recipe could use just a hint of sweet. Thanks for the recipe!!!!
