Banana Sour Cream Bread

AMAZING. The BEST banana bread I have ever had. Everyone who eats it asks for the recipe! I'm even making it in lieu of a birthday cake. It is THAT good. I use a half cup less sugar than the recipe calls for.

Black Bean and Salsa Soup

This was seriously amazing. My husband is vegetarian and I am not, so finding a soup that we both love is hard. This was delicious, healthy and few ingredients. We used 1 cup of super hot habenero salsa fresh from the farm down the street. Delicious. Tons of flavor. I was really suprised how easy it was and tasty. Definately a keeper. I don't like green onion so we garnished with some cheddar sprinkles, fresh tomato and avacado slices. Next time, I'm going to add a can of corn (not blended).

Pasta Siciliano

I was really excited to try this because the reviews were so good.. I wasn't very impressed. It was good, but I am not a huge fan of black olives or sun dried tomatoes (unless in a bagel). Next time, I will use the same "sauce" and cook mushrooms and broccoli with garlic and maybe some meat. Overall, for the amount of calories in this dish, I wish it would have tasted more amazing.

Cabbage Rolls II

Best of Everything Veggie Burgers

This was super easy to make and would have been really fast except the brown rice takes forever to cook. These really were delicious. My husband is vegetarian and there is a resturant in town that makes burgers just like this, only they don't fall apart like ours did.. We really had trouble keeping them together. I added an extra egg and a couple of quick oats and put the rest of the burger mix in the fridge so hopefully tomorrow it will be more dense and make better burger patties. Otherwise, these were delicious.

Bebop Baked Beans

I should have left the regular can of pork and beans alone. I didn't enjoy this recipe and don't like that it was seriously a can of pork and beans with some "flavor" added. I made the Texas bean recipe from this website and it was delicious, and from scratch. I can't believe these are rated so high. Too sweet and too much flavor.

Vegetarian Chickpea Sandwich Filling

I used yogurt instead of mayo, since it's much better for you. This was a refershing lunch. I put it in pitas with some tomatoes and lettuce. I enjoyed the texture. I left out the onion as I don't like raw onion and added extra celery (I love the crunch). I will make this again. Nice, light and healthy. A con: not much on the flavor. Some jalapeno would be delicious diced up in it to give it some kick.

Terry's Texas Pinto Beans

I really enjoyed these beans, but I doubled the recipe and they started to dry out really quick, so I added a can of red enchilada sauce and a can of diced green chilis. I also used a can of pace instead of the green salsa.. My husband loved them. They were too spicy for the kids. I loved them. My picky extended family hardly touched them so we had nearly two pounds of beans left after our family night. Doesn't hurt my feelings though, they hardly eat anything. I like that this is different and delicious. I will make them again (on a much smaller scale).

Buttermilk Oatmeal Muffins

The kids love them. I added some cinnamon and vanilla per the reviews. Next time, I will leave them out. Three stars because the kids love them way more than my husband and I. I substituted oil for butter.

Mushroom Lentil Barley Stew

My vegetarian husband is giving this 4 stars. I would give it three. I thought it was bland. I didn't have summer savory but otherwise the only other thing I changed was 1 whole fresh onion instead of the flakes. Good texture, just not much flavor. If the kids weren't eating it, I would have added some heat.

Spinach Lasagna Rolls

This was excellent. My entire family loved it, even the 2 year old couldn't get enough. I did add mushrooms and garlic to the sauce. I also only had whipped cream cheese, which worked just fine. It was seriously delicious and really pretty easy. My vegetarian husband said to give it 5 stars..so did my 7 year old. Bam. Going in the recipe box.

Slow Cooker Creamy Potato Soup

Egh. I thought the can of milk was unnecessary and made the soup too rich. I brought it to my grandmas for dinner and they made me take the leftovers home. Nobody wanted them. Next time, no can of milk. I will try it at least one more time and maybe change my rating depending on how it turns out. Maybe 2nd time is the charm?

Green Chile and Rice Casserole

I thought this was delicious. My kids didn't like it. My husband and I both enjoyed it and it was super easy to make. I just popped the rice/seasonings and butter in the rice cooker mixed everything together when the rice was done and put it in the oven to broil the cheese on top. Even though my kids didn't like it (they are 7 and 2), I gave it 5 stars because it was so easy.

Broccoli Cheese Bake

This was good. We had no leftovers.. I did cook 1 cup of rice in the rice cooker and added the rice in the dish. I also didn't use as much butter as it called for. I loved that this was made with no processed ingredients. I looked along time to find a broccoli bake with no fake cheese or canned soup. Bravo! Family enjoyed it. Oh, I also added some garlic and skipped the eggs all together! My husband doesn't like eggs and after I got so far into the sauce, it was thick enough that I thought if I added eggs he wouldn't like it.

Eggplant Parmesan II

This was fantastic! My husband has been raving about it since I made it (and I'm really not a very good cook). I sort of followed the recipe.. I made a couple of exceptions. I sauted mushrooms iwith garlic and a little butter and then layered it over the eggplant. I also made a meat version since my husband is a vegetarian and I am not. I added hamburger to one. I didn't salt the eggplant and leat sweat.. I forgot. You couldn't tell. It was really delicious. I was suprised, I was very hesitant of eggplant and hadn't ever had a good dish with it. This was super delicious and will now be a staple in our house. I did end up cooking the eggplant for about 10 min each side.

Fast and Easy Ricotta Cheese Pizza with Mushrooms, Broccoli, and Chicken

This was very bland. My kids didn't even like it, and they love broccoli. I have no idea why this is rated so high. It is really lacking in the flavor department and not worth the extra calories.. I'd stick with tomato sauce.
