Black Bean and Salsa Soup
This was seriously amazing. My husband is vegetarian and I am not, so finding a soup that we both love is hard. This was delicious, healthy and few ingredients. We used 1 cup of super hot habenero salsa fresh from the farm down the street. Delicious. Tons of flavor. I was really suprised how easy it was and tasty. Definately a keeper. I don't like green onion so we garnished with some cheddar sprinkles, fresh tomato and avacado slices. Next time, I'm going to add a can of corn (not blended).
