Chicken Parmesan

I don't cook often, so I'm not very good at it. But with this dish, my family said I scored big with this one! It was easy and I agree with the others - the recipe as is provides great flavor. I love the Panko breading idea...and the fact that it's not swimming in sauce. Will definitely make it again!

Chicken Breasts with Olives

This is ok. It has nice flavor and I loved the olives with it. It was more bland than I'd hoped, but I think i'd make it again. Perhaps add a touch of salt and pepper.

Brussels Sprouts in Mustard Sauce

Disappointing! The brussel sprouts tasted great when they came out of the chicken broth...but then when i poured the sauce, ooh, it just didn't taste good. Almost like it needed salt or spices or something. Now granted - perhaps it's because i used spicy brown mustard instead of dijon?

Chicken Pot Pie IX

My family loved this, even my skeptical 7 y.o. who wasn't sure about the celery and carrots. She said she would only eat the chicken...well, two helpings later she'd cleaned her plate and said she loved it! Flavorful and so easy to make!

Collard Greens

We loved these! I used Portuguese sausage instead of salt pork, and added some sauteed onion and garlic too. It was excellent!

Roasted Yams

Really enjoyed these. suggest tossing the yams in the olive oil rather than drizzling...as mine stuck to the foil. My hubby liked them too...he doesn't like anything sweet in his dinner...so was suspect...but no maple syrup or marshmallows in this one, and he really liked it!

Lime Chicken Soft Tacos

I liked this very much and is kid friendly since it's not spicy. My 7 y.o. ate it right up. I think it could benefit from green chiles...and maybe a few optional jalepenos on the side. I altered slightly by adding just a little spanish rice to the filling. I used fresh salsa instead of jarred. Really really nice!

This was really easy and really good! I'm terrible in the kitchen and this was no problem for me. My husband wondered though why use butter instead of olive oil...I have no idea, but it was good!
